Healthy Living Photo Thread v. What did you cook today?

Flax eggs would have probably done the trick there. 1-2 tbsp whole flaxseed in 1/4 cup water, then blend the everloving hell out of it. You'll wind up with something that has the consistency of runny snot, but it works great as a substitute for eggs as a binder.
Yup, I was going to use flax. :) Would it work the same if I took 1-2 Tbsp flax, ground it, and then added the water?

Rinsing quinoa is a MUST. They're coated in a bitter mucilage that needs to be removed prior to cooking for maximum deliciousness.
Some people apparently don't taste it or something. I always taste it when it hasn't been rinsed, but I know of at least two people who don't rinse quinoa and don't complain about the taste.

hail caesar!

I haven't tried it when it's been washed yet. You've been keeping me away from the quinoa-y goodness?! *gasp*
You have, if you've had it at my house. :P Though now I'm not too sure if you have had quinoa while at my house. Hm.

Tonight's meal was some more quinoa and rice, this time with black beans, and steamed onions and carrots that turned into being sauteed with a bit of Earth Balance ("margarine"). Threw in some capers, and voilà. :P

ap-- It's okay, they're allowed to be wrong. :D

Ground flax in water would probably work, as long as you mixed it well and let it sit long enough to form a gel. Only one way to find out!

How do you guys know how to cook all these things? All I can cook are french fries /w eggs or steak, mashed potatoes, pasta, schnitzel.

Those are some big ass carrot pieces!
I was lazy with chopping the one day and just wanted to chop 'em all up and get it done before they went bad.

I wasn't born knowing how to cook all these things. ;) I used to only know how to cook basically what you do. Start with the things you know, and go with things that are similar. Rice is also very simple to cook, though most grains are. If you know how to make french fries, you could roast some vegetables. You could probably do a baked potato. *Shrug* I'm rather inept in the kitchen tbph but I make do--Takes me a lot longer than most to make recipes, but so what?

If you know how to make those things you're in front already. Basically anyone can follow a recipe and most things are just variations on already existing recipes.

My feelings are you have to want to cook; all the people I know who don't cook hate it and see no point in it. If you enjoy it, you'll do well at it.

Learning to follow recipes is step one. Then, once you have that down, you can start to play around with them, make them your own. Eventually, you figure out what goes with what, and you can start improvising. Playing in the kitchen is such fun; even when mistakes are made, resulting in nearly, or totally, inedible creations.

Been on a bit of a potato kick lately.

Last night I made baked French fries from this recipe which was only loosely followed:

They weren't quite done all the way but were still delicious--A huge improvement over the last time I tried (and horribly failed) at making French fries, LOL. The dip left something to be desired and tasted kind of like garlicy mayo, which would happen if you don't use the yoghurt like I didn't. :P When I make this recipe again, I'll probably skip the dip. ;)

This afternoon I loosely followed this recipe for home fries, with amazing results:

I should've flipped a few more over so show just how well done these were. Almost each one was done to perfection where they were crispy on the outside but soft on the inside. So, so, SO good--Most likely due to the 1/4 cup of butter the recipe calls for, LOL. :D

I turned the heat down to "medium low" towards the end 'cause "medium" was starting to burn a couple. :P

I will be making this again.

Last night I was craving meat so I bought a sirloin steak at the grocery store and broiled it with balsamic vinegar, oil, garlic, and salt
Steamed some asparagus
Boiled some small red potatoes and seasoned with garlic, pepper, and rosemary

It was so good, so good I didnt take a picture because I just wanted to start eating it

The last few posts are making me so hungry!! They look and sound amazing.

Cottage fries (or home fries) are my favourite thing to make, I make them a couple of times a week. And that steak dish sounds epic.
