Italian style stew. Just your basic stew, beef, carrots, shallots, pancetta, bit of potato. Beef stock, red wine, bay leaf and some rosemary for the flavourings. Lovely![]()
I was just randomly posting what I was eating. Do you want the recipe? Super simple.
Chop the beef (recipe says 400g rump steak, it's pretty quick) into 2cm cubes, into a bowl, dust with flour.
Couple of spoons of olive oil, brown in the pan then remove.
200g of shallots/baby onions + 50g of chopped pancetta into the pan, cook for 5 minutes.
Add 1 carrot (finely chopped) and 150g mushrooms and 2 chopped garlic cloves, cook 5 minutes.
Add 150ml red wine, bring to boil.
Put the beef back in, add 1 tablespoon tomato paste (I had to use tomato sauce, it worked ok)
Add 400 ml beef stock a bit at a time, mixing it in to make a sauce, bring to the boil.
Into a casserole dish with a few springs rosemary and a bay leaf.
25 minutes in the oven at 200, the last 5 minutes with the lid off.
Season, rest for 10m and serve.

I'm eating the peeled part of the carrots I peeled and about to start on the half a carrot I peeled but didn't put in the stew.
