Has anyone got any tips on making authentic frittata?

Google 'authentic frittata recipe'?

Having spag bol here now and I don't even have to do any cooking, yas! Got a glass or two of red wine left over from last night as well.
 
I've got fresh eggs, new potatoes and onions I dug up so I'm thinking of making Spanish omelette with a green beans in olive oil & lemon on the side.

Has anyone got any tips on making authentic frittata?
Spade's mum will be home in a few days, if you can wait until then she'll most probably have one since she does all the cooking

I pre-cook and grate the potato into the egg and veg mix B&W - though I don't do authentic ;) I like it thick, solid and dense like cock :D

Cannae beat a handful of parmassan in the mix either yummmy.

We had pasta with mushroom, courgette and bacon - lemony buttery with spinach leaves wilted in at the end. Picked brambles earlier with an eye to doing a sponge pud with them.
 
I don't want a recipe, I want tips. Little nuggets of wisdom gleaned from experience. Those little things that make the difference between a good recipe, and a great recipe.

To help you relate, like what jar of curry sauce is best, Pataks or Lloyd Grossman :p

It's very rare for me to eat sauce out of a jar, soup out a tin etc.
 
You and B&W are easily amused, that joke wasn't funny the first time you said it, simple things for simple people I guess.

My housemate is spanish and predictably her spanish omlette is divine. She cooks the potatoes off in the pan in large chunks first, must take a fair while, with the onions and then adds the egg. her's is really dense with potato chunks and she cuts it up into squares. She flips in to cook both sides.

very similar to my tortilla, learnt it from a woman I lived with in Spain, parboil the spuds in big chunks, drain, dry, then sautee in a lot of hot olive oil...then add onions (a lot of Spaniards think onions are WRONG in tortilla)....get the spuds browned, and onion soft...

In a bowl, half a dozen eggs or so...whisk, salt and pepper...

Ideally let the potato/onion mix cool for half an hour or so then dump it into the bowl with the eggs...

get the large frying pan REALLY hot again, with a splash of olive oil, add the mixture, turn pan to minimum and cook for ages, until it's not far from cooked through...

Turn it over by sliding onto a plate and then turning it over into the pan...flip it if it's a small 2 egg one, or if its a massive 8-10 egger it's prob best to finish the top under the grill.

It should be dense, more potatoey than eggy.

Every Spaniard makes tortilla according to their mother's recipe, and any other way is wrong.
 
Just got some nice bargains in Co-op. Two pork chops for £1 and 2 lamb chops for £1. I love both pork and lamb but I never buy chops and have only eaten them a few times grilled, they were dry and tough. Is there a better way to cook them? Jamie Mailmonkey you'll know I'm guessing.

Also got a 3 litre carton of Tropicana for a quid and some cheap salad and veggies.

EDIT: Seems you can bung them in the slow cooker no problem! Jobs a good one. Will chuck them in with some concoction of herbs and spices.

Thanks Kate, Wibble & MM :) Didn't have enough olive oil so have postponed frittata making till I get back from Spain, leaving at 3am :| While I'm there I'll try the real thing so I have some idea what I'd aiming for, as I've never made it before.

I've got a couple of chicken breasts marinating in honey, mustard and thyme, will cook them tomorrow but not sure how yet or what with.
 
From the tin, eaten with a dessert spoon?

I've done that before a coupla times. And I wasn't even camping ;p
 
Appetite is kicking back in after a binge. I want pizza. Hot shot pizza with chips and garlic sauce. Mmm. But I'll settle for a chicken salad. I have too many unhealthy habits. Fuck me, I want a pizza so bad though! Almost as much as I want another line. :\

Do they not deliver round your way, Papa Johns are the best IMO. I used to work for them when they were Perfect Pizza:)
