I've been expending the minimum effort on food preparation lately for a few different reasons. But last night I made a little more effort to make a relatively healthy, tasty and balanced meal.
It's kind of my own invention, rather than any named recipe.
It's chopped chicken pieces, pan fried to the point of just nicely browning and turning crispy, before adding a tin of ratatoiulle. When I can be arsed I add extra fresh veggies, tomatoes, mushrooms, peppers are all great. I couldnt be arsed last night so it was just crushed garlic added at the last minute, along with several spurts of tomato purée.
I'd been cooking some wholemeal pasta at the same time, and once both dishes were ready, they got mixed together into a baking dish, and then baked in the oven to brown and crisp everything up. Parmagannio Reganio and cracked black pepper was added at the end along with an olive oil dressing,
Very nice too. Even if I say so myself. Although it would have been better to grate the cheese on top of the dish, and give it 5 minutes to melt in and brown in the oven, before serving, but I skipped that step for some reason.
A side salad would have topped it off great too. But I have never yet been able to muster up the effort to prepare a salad along with everything else, as far as this dish is concerned.
I think tonight it will just be a piza.
