The Recipe Thread (EADD Version)

Someone mentioned mung beans in another thread, I saw some today and there apparently a superfood so I bought a tin. What to do with them?
 
Strawberries & Cream Banana Bread:

PREP TIME: 15 Min
COOK TIME: 1 Hr
READY IN: 1 Hr 15 Min
SERVINGS: 12

INGREDIENTS:

* 2 cups plain flour
* 1 teaspoon baking soda
* 1/2 teaspoon baking powder
* 1/2 cup brown sugar
* 1/2 cup white sugar
* 1/2 cup butter or margarine
* 2 eggs
* 1/2 cup sour cream
* 1/2 teaspoon vanilla extract
* 3 mashed bananas
* 1 cup chopped strawberries

DIRECTIONS:

1) Preheat the oven to 180° C . Lightly grease a 9×5 inch loaf pan.

2) In a mixing bowl, mix the flour, baking soda and baking powder together.

3) In another bowl, cream together the butter or margarine and sugars. Then add in the eggs, vanilla, sour cream and mashed bananas and mix thoroughly. Stir in the chopped strawberries.

4) Slowly add the flour mixture into the wet ingredients, stirring well as you go.

5) Pour the mixture into your prepared loaf pan and bake on 180° C for around 1 hour or until a toothpick inserted in the center comes out clean.

6) Allow to cool for 10 minutes in the loaf pan before removing and placing on a wire cooling rack to cool fully.

Gonna tuck into some of this in a bit. :)

I think I've got a recipe for an African stew or something of that nature around here somewhere, Spade. I'll have a look if you're interested.
 
I found the recipe. But as memory serves, it didn't have a great deal of flavour. So on that note, I'm not gonna post it up.

But I was having a good old look online and this was the most eye catching thing I found. Everything else sounded/looked pretty bland in comparison and I thought this looked like your kinda thing anyway.
 
I gave this a go for tonight's dinner. I wasn't expecting much as they're not very tantalising ingredients. However, t'was yummy. :)

Potato & Fennel Soup:

INGREDIENTS:

SERVES: 3-4 (depending on how greedy you are ;))

* 1 head of fennel
* 1 litre of vegetable stock
* 3 medium potatoes
* 4 celery sticks, choppped
* 1 large onion
* 2 tbsp of fresh parsley, chopped

1) Place the fennel in a steamer (I used a saucepan of boiling water, a colander, and a plate to cover) and steam for 25 minutes. Chop into small pieces and discard the root and top stems.

2) Meanwhile, place the stock, potatoes, celery and onion into a large saucepan, bring to the boil and simmer for 20 mins. Addthe chopped fennel and simmer for 5 mins.

3) Transfer the soup into a blender, add the parsley and process. Return to the saucepan and heat through until piping hot. Season to taste before serving.
 
Muesli cookies

4oz butter
3oz light brown sugar
3oz peanut butter
1 egg
2oz plain flour
½ tsp baking powder
½ tsp ground cinnamon
8 oz muesli
2oz raisins
2oz nuts

Pre-heat oven to 180 and grease a baking sheet.

Cream butter and sugar together.

Beat in egg and peanut butter.

Shift flour, baking powder and cinnamon into the butter mixture.

Stir in muesli, raisins and nuts.

Taste in case it needs more sugar.

Drop rounded tbsp onto baking sheet 1 inch apart.

Bake for 15 minutes until lightly coloured.
 
I'm going to make up a load of different pots of soup this weekend for lunch over next few weeks. Any suggestions of types I could make? You don't need to give me recipes as google is my friend. ;)
 
Going to make home made chilli sauce and tomato ketchup this weekend too if I have a chance.

I'd quite like to have all my mates round for a big indian feast one night but getting everyone together is near impossible these days especially for something 'gay' like dinner. 8)
 
I've just discovered how simple it is to make pesto, literally just add few ingredients together then blend. Will be making some this weekend. :)
 
That Indian veggie website looks tip-top, wifey! Love Indian food, shall have to make some of that stuff for sure. Will impress the family and keep them off my back re: being useless ;)
 
Have made a toffee apple pie with a biscuity pastry.

12oz plain flour
8 oz butter
4oz castor sugar
2 large Bramely apples
2 tablespoons butter
3 tablespoons demerera sugar

Sliced apples and cooked slowly with spoonfuls of sugar and butter until lightly carmalised. Cool. Flour, sugar and butter in bowl, crumb and hand mix into a solf dough. Roll out into baking dish, lay apples on top, cover and bung in oven for 40 mins.

Had to use a wine bottle as a rolling pin - not with the best results. Ugg
