Got this recipe handed out to me in class from a classmate who did their presentation on "brain foods":
Supposedly really good.
Ingredients:
2 salmon steaks or salmon fillets
1 teaspoon butter or olive oil
10 tablespoons orange juice (with pulp)
salt
ground pepper
1 dash oregano
1 dash brown sugar (optional)
Directions:
Pre-heat oven at 350 degrees.
Grease a baking dish.
Clean and pat dry the salmon steaks or fillets.
Lightly rub salt on one side of fish.
Place salmon pieces in the baking dish.
If using butter, dab butter on the salmon. If using olive oil, brush top surface with oil.
Pour orange juice all over the fish.
Sprinkle pepper, oregano, and if you like, brown sugar which will caramelize.
Bake until the salmon flakes.
Supposedly really good.
