Salmon thread!

Got this recipe handed out to me in class from a classmate who did their presentation on "brain foods":

Ingredients:
2 salmon steaks or salmon fillets
1 teaspoon butter or olive oil
10 tablespoons orange juice (with pulp)
salt
ground pepper
1 dash oregano
1 dash brown sugar (optional)

Directions:
Pre-heat oven at 350 degrees.
Grease a baking dish.
Clean and pat dry the salmon steaks or fillets.
Lightly rub salt on one side of fish.
Place salmon pieces in the baking dish.
If using butter, dab butter on the salmon. If using olive oil, brush top surface with oil.
Pour orange juice all over the fish.
Sprinkle pepper, oregano, and if you like, brown sugar which will caramelize.
Bake until the salmon flakes.

Supposedly really good.

Anyways, with any fish, i pull the bones out and try to peel the skin, then let those parts dry in the sun and grind them into a bullion-type stuff for stocks and soups. Then again, I'm super weird about food and as a vegetarian will only eat what I catch or kill, and even then I have to use ALL of the thing.
 
i prefer my lox on english muffins actually :)

Now i've googled lox, i know what it is and LOVE it! It's a staple for every picnic i go on - i love it with creamed cheese on crusty bread/bagels, or even by itself. I knew it as smoked salmon :)

A friend made a beautiful salmon mousse from smoked salmon - creamed cheese, smoked salmon, salt/pepper and lemon juice into a food processor. So easy and delicious!

No problem! Twas kinda funny: I saw this thread and then that day got handed out a recipe for salmon. Figured I'd share.

That's a good policy to have--Not weird at all. If I caught/killed anything, I would use all of it... But since it's really not possible for me to do that, I follow a plant-based diet. To each their own, just wanted to say you're not weird for using everything--I think it's awesome actually.

Haha, I'm glad I shared--Figured it was a pretty typical salmon recipe. Apparently it's pretty atypical/delicious sounding.

BTW, the brown sugar in that recipe sounds non-optional to me. :)
Hah, that's what the classmate who passed out the recipe said.
 
But yeah, some fresh salmon is tasty, especially when you catch it. Fishing for them in Puget Sound is unlike anything else.

I still have these bullion type cubes I made, they are actually really good soup bases and broths. I would encourage everyone to save the bones and skin (and eyes and cartilage if you have a whole fish) and dry it out rapidly, then grinding it to powder and press it into cubes.
 
ok, good fresh salmon aside, if we are talking canned salmon and delicous freaking salmon patties, no bones man. no. bones. i made the mistake in our older days of less income, and went with the cheap big can. my eyes went wide with excitement when i saw that damned can on the grocery shelf and i thought of all the patties i could make with that meat.....and no. talk about disappointment.

the whole can went in the sink. just can't do it. but the good small can of boneless premium salmon.... yummm. who doesn't love a good salmon pattie?!
 
I always leave the skin in (good for Omega fatty acids) but take the vertebra out.
Granted, I don't make patties with them, but I hate the soft crunch of the bones!
Yuk!

Alright, I freaking love salmon. I just had it last night, grilled with olive oil, salt and pepper and then put on a bed of spinach and tomatoes with honey ginger dressing.

Another thing that's good to do is make a grilled salmon BLT... droool.

Are you supposed to eat the skin? I never have. I heard it's good for you, that's where all the good fats are. I just can't bring myself to eat the scales :\
 
If it is ground into a salmon patty, you won't notice them.

If you pan fry the skin, then it will have a pleasant crispy texture anyway.
 
Hmm, interesting. i'm more of a salmon fillet person myself. I'll have to try pan frying it sometime.
