The mushroom which seek you is called Amanita Muscaria aka fly agaric. It should appear around the Sydney area in mid Autumn and will be very common in and around pine trees (especially plantations) up until roughly July. It associates with various deciduous and coniferous trees. It has a symbiotic relationship with certain tree species (most commonly pine in Aus) and the best way to find it in Australia, is to find pinus radiata in autumn and search around the base of these trees.
Amanita Muscaria are always fruiting a few weeks prior to the southern psilocybe species (P. subaeruginosa) and they tend to die off with the early winter frosts, where as the psilocybes will usually proliferate into mid winter.
They aren't as common in your area as they are down south, but I have found them as far north as the Qld boarder with the correct conditions.
Just remember that these are a deliriant psychedelic and are unrelated to psilocybes. Correct preparation is key to a good trip on this species.
You most likely wont find any this year, but every now and then, I have been surprised by random Amanita Muscaria finds in both Australia and NZ (North Island) over summer.
All the best
