While the plant is alive, it breathes through the stomata, in the leaves.

But right after it dies the stomata close forever, there is no more respiration and transpiration through the leaves.

Keeping the leaves (at least the big shade leaves that won't be smoked) in the plant after it dies just helps trap water inside and slows down the drying.

But you want the plant to dry (not too fast though), so cut them off. At least the big shade leaves.

p.s. there are some places in the world like Morocco or Mexico where the shade leaves aren't always clipped right after harvest. There are some reasons for it:
1- they are dealing with a harvest of tons of weed, and the work is all done by just a handful of people. There are some more important tasks for them.
2- the plants are stacked on the ground til waist height inside dirty shit sheds or even in the open, and keeping the shade leaves on somewhat prevents the buds from getting full of dirt or receiving the bad effects of a midday sun.
3- these people don't really care about the quality of the end product. It's gonna be low grade hash or ammonia smelling brick weed anyway. Why bother?

I'd take out the big leaves indeed, the rest can be done later.

Also, next time, just take the plant out of its pot (or garden soil), roots and everything and hang it upside down. No need to cut it off actually.

Some people wait to trim until after the plant has dried, on the assumption that the leaves protect the buds. For the average indoor grower I think this is pointless. You will find it MUCH easier to just do the bulk of the trimming while the buds are fresh. That means all large sun leaves and as many sugar leaves as possible. Later on you can do the finishing touches when dry. The buds do dry quicker, but not too quickly. Generally the slower the drying period, the better the bud but they still are fine using this method.

There is nothing more frustrating than trying to trim the leaves off a dried plant. It just creates more work for you.

I know a grower who thinks that there are sugars in the leaves that get transferred to the buds while they dry. She said her neighbor and her grow the same strains, use the same nutes, and the only difference is that he chops his leaves right away, while she waits for them to dry. Apparently her bud is way more tasty.

And also, lazyness is the bane of life.
