idk about the spinach taste, maybe it's a clorophyll thing? or if it's more on the cooked cole side of spinach- like smells, maybe some thiol (like an alcohol but containing sulphur, if i understand it, i think they make the really strong skunky smells and farty cabbage smells) that evaporates?
during curing, i do believe the lighter compounds evaporate (like myrcene, pppsh good riddance), leaving behind the heavier compounds (like the sesquiterps, mmmmmmmmmmmmmmmmmmmmm).
i get strains from the chem side of things, and usually caryophyllene is the highest or second highest terp... if myrcene is the highest terp, i prefer to cure the life out of it or get prerolls where the bud is already crushed up and the myrcene well evaporated.
