I don't have stage fright so much, but by the time I make it to the urinal, I've been holding in so long that it's difficult to get started. Well, I suppose there's also the pressure of knowing that there's a line behind me waiting to take my spot when I'm done. So over the years I've developed a technique that works for me. When I'm next in line I try to relax my piss muscles a bit... not to the point of peeing my pants, but just a bit so I'm not so clenched up. I also breath slowly and deeply to try & relax & calm myself. Then when it's my turn I step up, unzip, pull out & aim. Next I close my eyes and take a long, slow, deep breath. As I release the breath I slowly open my eyes and picture my pee coming out with my exhalation. This usually works great on the first try.
