Ok, at my family owned nursery, we have a cactus that is called "cereus peruvianus monstrosus." Would I be able to extract mescaline from this cactus?

Extremely unlikely.

Cereus and Trichocereus are totally different in regards to mescaline, but the plants can look very similar.

Unless someone mislabeled a true blue Trich as a Cereus, you are better off leaving that plant alone.

i just got some seedlings and want to know if they are true peruvian torch because i found that they have 8 ribs most pics i see have 6

no. but the funny thing is, you will also find actual san pedro, as well as many other similar cactus labelled "trichocereus peruvianus monstrous"....like theyre all the same plant. most retail cacti and succulent are supplied by the same company.

i always wanna scream and shout at the people working at the nursery section, but i know its not their fault.
Peruvian Torch and San Pedro are Echinopsis, not Cereus. That cactus probably isn't Peruvian Torch, but I can't make any claims about its mescaline content.
Echinopsis is synonymous with "trichocereus". but you are correct, certainly not "cereus"
