add'a thumbnail o' ginger
cut up an' bruise
some mint leaves...
Shake & double-strain
into a cocktail glass
& garnish with a mint leaf.

Amazin'ly subtle fo' so many complex flavours...

60 mls mango puree
30 mls malibu
30 mls suntory mango (mango liqueur in a midori bottle)
30 mls cream

shake it like you mean it then strain into a martini glass

viola! weis bar cocktail!

faaaark how sweeeeet would that be!! I mean sweeeeet as in the taste and not as in "dooooood sweeeeeeeet".
Not a fan of sweet sweet drinks. Don't mind something with fruit in it but for me it needs a bit of a kick at the end or something refreshing.

my cocktails of the moment are nice and simple - gimlets and daquiris:

gimlet
45mls gin
30-ish mls fresh lime juice
dash of lime cordial
a small dash of sugar syrup if its way to tart
note: traditionally they are just 45mls gin with 30mls lime cordial but i prefer with fresh lime

daquiri
45mls rum (mmm....appleton!)
30mls fresh lime juce
10-15mls sugar syrup
i love daquiris because there is so much you can do with them, try grating some fresh cucumber in before you shake it.

both are double strain

arrrgh! - why aren't there any 24 hour bars in brisbane??? all i wanna do is sit and have a couple of quiet ones after work with some cool people with some chilled tunes - instead my options are:
paying 15 dollars to go to the family for 2 hours tops
sitting at 299 with thumpin metal at 6million decibels for two hours tops
mixing it with the dregs at belushis for 2 hours tops
being crammed like a sardine into moonbar for two hours tops
sitting at the beat with a bunch of speedfreaks and gay dudes for two hours tops - with ridiculous music volumes again...
or going home and drinking two beers by myself and kinda half talking to people without "conversation' in the true sense of the word for as long as i like (boring)

bah - if only my utopia would hurry up and emerge - a bar that doesnt open till midnight/1am and you could only get into with a hospo/shiftworker payslip, no-one else is allowed in, nice chilled after-work style tunes, big comfy couches, maybe an outdoor back area for us smokers.... i can dream can't i?

I went back to bar I worked at for a couple of years on the weekend. Not a pleasant experience, not only did they make me pay to get in, I had to pay for all my drinks and security tried to kick me out because a rookie biatch of a barman didn't like my sense of humour when i thought it'd be funny to see the look on his face when i started juggling empty pot glasses. Only reason I didn't get booted out was when the old manager saw what was going on.
Was pissed off when even barmen i knew charged me for drinks (and I was only drinking beer) and there was always an unwritten law of current staff and good ex staff don't pay for anything.

still..if you worked there for a couple of years, that's a bit harsh

but yeah i understand that can suck dude, i never expect freebies, but getting them is always a pleasure=D

I was just disapointed not to be treated a bit better after working there for a long time and being a very close friend of the owner for a long time. When I worked there is was always policy that staff and certain ex staff were treated in a certain way. I never expect my entire night to be a freebie but I don't expect to pay for every drink. Its really just a common courtesy thing within the industry, kinda part of the code of practice, well at least it used to be in the circles in which I moved. Along the same lines as when barmen at patrons in foreign venues they would very rarely give the barmen there a hard time cos they know what its like.
Anyway I guess I was just pissed off that blokes I treated very well in the past and looked after didn't return the favour until they realised the boss was watching.

the shot with the absinth sounds damn potent. I like ursus but i reckon ursus and chambord would be too sweet even with the lime? Same for the applemeister I would imagine.
 
too true beech - come to think of it - i'd probably have the same gripes... i know i'm always patient as hell in busy bars/clubs - cause i've been there, done that.
ont he other side of the scale i was stoked the other night upon returning to my old bar to be greeted by some of my regulars with open arms and greeting s of g'day mate - can i buy you a beer? goddamn:) it just goes to show, treat people well and it always comes back to you

Know what ya mean Loud247 its always nice to get some appreciation from customers when your not behind the bar. On my return to my old place of work it was good to catch up with some of the regulars have have a good chat, although its kinda hard in a loud club.
Looks like this weekend I'll be making a return to the barman caper by donating my time to work the bar at a mate's sisters 21st. They have gone pretty all out and hired a hall and are set up a proper bar in there complete with taps and the works. One of her folks is involved with CUB so got a stainless steel bar with taps and the works to set up along with 5 kegs and a shit load of spirits and mixers (can probably guess her folks are loaded) so a few of us ex barmen are donating our time and going to work the bar. Actually quite looking forward to it, the party has a 70's theme so we've sorted out matching safari suits to work in. haha
 
Q1. Are you a career barman? (i.e. do you want to go beyond mixing drinks and develop a career in bar/hospitality work)

Yes. I work in bars to exp[eirience hospitality at its peak because i want to operate and own my own nightclub.

Q2. What's your favourite aspect of bartending?

The atosphere. I love and thrive on a busy atmosphere and bring on the no smoking rules :D

Q3. What do you LOATH about barwork?

People who dont take the whole "you cant have any more speach" very well. I had an ash tray thrown at me once and a pot glass a week ago...

Q4. What's your favourite drink to serve - and your least favourite to serve?

Beer. Quick and easy. Least fav is bundy, oyzo and chartreuese. The smell turns my stomach.

Q5. Flair bartending

Yup i can throw bottles. Love it.

Q6. Money's no object - what are you drinking?

Blue Label JWalker on the rocks.

Q7. Worst/Scariest experience behind a bar?

I will sum it all up. Junkies shooting up in my toilets and falling asleep and having to throw them out. Waking junkies is scarey...oh and having ash trays, pot glasses threown at me.

Nope not really.




The only part of my job i hate is i work three diff venue in a week, the prices get confusing and when i have my one day off its normally earlly in the week and everyones to tierd to do anything and theres no where to go on a mon or tue night or when i finish at 6am on the weekend. going to a hard club is the last thing on my mind.
 
^^I think that is why a lot of bar staff turn their job into a social/partying activity. Probably explains to some extent the rampant drug use by bar staff. I know when I worked in bars by the time I finished work at 8am at the earliest if i was lucky (usually finish 10am-11am) that if my friends were still out they would be fuck eyed and not much point catching up with them. Also often by that time of the morning I wouldn't really feel like kicking onto a club or venue because I'd been working in one all night so I often used work as my time to party and socialise. I'd often get friends to come to where I was working so I could hang out with em a bit and have some fun. Not as good as a night out with ya mates, but you have to take what you can get when working full time in the industry and often settling for 2nd, 3rd and 4th best option is only choice if u still wanna have contact with mates.
Well thats how I found it anyway at the various venues I worked.
