im big into ginger beer as a mixer at the moment. try 42 below passionfruit with ginger beer and freshlime.

i'm all for bending the rules - but come the end of this week/month? (in QLD at least) it's illeagal for anyone to work in a licensed venue without their RSA - they is crackin' down on it up here and i f'ken HATE it! bye-bye laybacks *sobs*
you can't crank a party at a bar anymore "a round on the house" is out of the question too, i used to get mad parties pumping in the tiny bar i used to work at using those tools...

bah - queensland nightlife is getting kicked in the balls by the government - rant rant rant rant...

I'm in Vic and yeah down here everyone working in a bar is spose to have their RSA. Has been that way for a long time. As I'm sure you know there are plenty of less than above board establishments in the hospitality industry. I always intended on getting my RSA but just never got around to it because those I worked for were willing to bend/break the rules for me. I remember having to get out from behind the bar on a few occaisions when the licensing goons have turned up to check things out. Good times.
At the end of the day I highly doubt any bar in the country adheres strictly to RSA guidelines. If they did they would never have any intoxicated people in the venue. I challenge anyone to successfully run a profitable venue without having intoxicated patrons.
 
getting an RSA is dead easy, two hours of videos with a test at the end that they feed you the answers for.

im fairly sure everyone in vic is supposed to have one and it certainly doesnt kill the party atmosphere in most places. there is a difference between getting someone drunk and getting them paralytic. the first seems to be generally exceptable and all of the venues ive worked in have never had hassles from liquor licensing about it. people barely conscious and vomitting is a hassle for everyone and should be cracked down on
 
yeah totally agree with you there. But technically to the letter of the law you aren't allowed to serve anyone to the level of intoxication. Meaning there should be no drunk people in the venue.
In venues I've worked at I would not cut someone off permenantly for the night but make em wait a hour or 2 before serving them anymore alcohol. Same as if someone is clearly pissed but behaving themselves i see no point to remove them from the venue. If they aren't hurting anyone but are just quietly sitting whilst a touch too pissed then they pose no problem then they should be allowed to stay. All these things contradict RSA. I've read through the information other barmen have bought back from the course and from what they say its basically all common sense but if it were to be followed to the letter of the law it would be rediculous.
 
any feijoa fans out there...

muddle one fresh feijoa with a lime wedge
45mls 42 below feijoa vodka
15mls boudier de pommes
15mls apple juice

shake and double strain. it can also be made with muddled apple instead of feijoa for a subtler taste
 
feijoas rock!! I'm assuming we are talking about the same little green fruit that you cut in half and scoop out in similar fashing to a kiwi fruit. I've never seen the word feijoa in text. We have a tree at our house and i love the little suckers!

your drink sounds a lot more pleasant than my Dirty Mutha but hey i'm sure they are both worth a crack.

I was a barman for a long time- won a couple of awards in Victoria a few years back, then moved up to Queensland to manage a little cocktail bar on the beach.
Couple of years there, but I've given it away now....too many nights where all my friends are heading out and I'm stuck at work. I was in the industry over 7 years, and finally got sick of missing out on all the spontaneous nights out with my pals.
Have been in more than one bar brawl, mainly due to no security...but at 6'6 and the ability to more than adequately handly myself, I've never been injured.

Favourite recipes..........I love using kiwi fruit with midori, vodka and lime....Randy Little Kiwi we used to call it.....NZers loved it... If you're ever trying to get a great selection of infused vodkas....jelly belly's are your friend....empty out 1/3 bottle vodka, chuck in 50-100gm of whatever flavor you're after (my personal favorites, blueberry, kiwi, pineapple and bubblegum), leave for a few days, keep shaking them up, and then strain them out.

chiccos make a great infused vodka as well, so do redskins (althought it tends to get a bit viscous).

you can make wicked chicco infused vodka martinis by replacing the vermouth with butterscotch schnapps. use chambord for making a redskin martini
 
how great is chambord for use in cocktails. It seems to have come into fashion a bit over the last few months, bars barely ever used to stock it and now its on display everywhere. I'm not one much for really sweet drinks so I only use it very sparingly otherwise I find the drink a bit sickly.
 
i know what u mean leader, but hey i'll always get a kick out of sleeping in monday (or getting home monday morning) when housemates or family members are groaning about having to get up for work=D

i'm still on the hunt for a espresso martini that really satisfies, most recipies i have used or tweaked are still waaayyy to sweet for my liking,

any ideas?

ive pm'd you a recipie that definately isnt sweet but its a bit vague so have a play around. ill have a go next time im working and post something more definative
 
Never really seen the attraction of the martini. Not something I enjoy at all.

Although I must admit I'm not really much of a cocktail person. I've found that after years of making them for other people that I have no desire to make them for myself.
Give me a nice simple good quality belgium beer and i'll be happy or in lieu of that a good bottle of red.
 
If anyone knows of any bar work going at the moment please PM me. I just got back from overseas and really need a job.

that's the beauty of barwork - so easy to find a job - there's always something going.

beech - i tried the dirty mutha, the easiest way i could describe it is a white russian with a kick in the balls for garnish....ouch

did find a solid espresso martini recipe tho:

30mls belvedere vodka
30mls espresso
15 tia maria

shake like all buggery and strain into a martini glass
garnish with three coffee beans

noooiiiiiiice

haha yeah The Dirty Mutha is not for the fain hearted. The old girl does have a fair kick in her step.

Anyone familiar with the Beer Daiquiri?
 
haha oh hell yeah its a gem.

Think strawberry daiquiri but replace straberry with beer.
