UK law on entrapment is considerably more flexible and not tightly defined by statute as the US. Undercover drug buyers receive considerable leeway in both countries. It's common practice for female undercovers to pretend a desperate withdrawal to entice goodhearted users to cop for them. The men have been known on occasion to act the heavy and threaten - "you promised, man" - if their patsy gets cold feet. A sorry bunch of method actors and hams who act like it's all a movie, which to them, I suppose, it is. Uusually, people won't have anything to do with them not because they suspect they're cops but because they're such terrible people.
I don't know what happened to thebigman but the standard street m.o. is to find someone so anxious for a share of the spoils they'll tell the connection they know the newcomer well. Of course, in reality they've just been approached in some public place like the dole or outside the drug clinic where drug down'n'outs are likely to be found. Undercovers who make a successful buy or two can hang around for weeks and months, buying as often as possible and recording everything, before arrests are made.
Sometimes, the smartest move is give evidence yourself and tell how it came down. A woman here, up on two supply charges, explained that having gone through drug withdrawals herself she was reluctant to abandon anyone else to such a fate, especially when they were clinging to her, crying and saying they'd top themselves if she didn't help. Made it sound quite amusing, didn't lay it on thick, but refused to accept she was other than a normal person placed in an abnormal situation. It worked and she walked out under a supervision order of some kind. She was, strictly speaking, bang at it at the time but, as she said, you can leave out the naughty bits.
I'm not sure if that's similar to your circumstances, thebigman, or whether you could try something similar. I know what you mean by the police moving the goalposts; there's a pre-supposition the defence will 'cheat' and they figure to even up the odds a bit. Means the defendant who plays it by the book is often unjustly shafted. Madness. Do the best you can and good luck to you both.
