i boil sweet potato's and then mash them with butter n milk.
they are very nutrious and a very good source of carbs

How do you eat your's?
 
baked, with butter cinnamon and brown sugar.

or mashed in a souffle and baked with marshmallows on top.
 
Sweet potato french frys.. make sure you have a grease catcher though!

If you're going to make them, realize they take less time than regular fries, and don't tolerate overcooking as well, either. They're done before they turn brown.
 
Sometimes I just boil them and take them with me for a portable snack.

Other times I chop them up and put in spring rolls.

The rest I just fry them in sugar :D

It's actually not 'unhealthy' unless you eat them exclusively. One of my peeves is how anything fat has become 'bad' in the public imagination. Read some nutrition books!

what are you talking about? "deep fry that shit in sugar butter grease!" is very unhealthy as opposed to "Sometimes I just boil them and take them with me for a portable snack." eating anything exclusively is unhealthy. i haven't read the nutrition books that you are talking about but im sure it says something about a balanced diet!

ps- and yes I still think fat is "bad." thats the reason I try to stay away from it or moderate it. look at what a fat person eats if you want evidence vs. imagination.
 
Well, the point I'm trying to bring up is that basic nutrients (for example, the fats in canola oil or butter) don't easily fall into binary categories like "good" and "bad," "healthy" and "unhealthy." Animal life is a bit more complicated than that- more of a balance game than struggle between Good and Evil.

You might be misinformed even if you consider the cholesterol in butter as making sweet potatoes "unhealthy"- because the fiber you'd get from the potatoes is more likely to bind with your bile salts than the cholesterol in the butter, so you end up passing most of it.

Furthermore, the fats in the butter aid your body's absorption of awesome nutrients like the fat soluble carotenoids in sweet potatoes/yams while boiling removes not only some fat soluble stuff but also a huge portion of the water soluble vitamins.

And believe it or not, butter is more filling calorie per calorie than the carbs in sweet potatoes, so most people will end up eating better balanced portions of potatoes and butter than if they ate potatoes alone!

Like I tried to imply, nutrition is a relatively complicated thing. I had tons of misconceptions when I was trying to understand it by making inferences based on the latest exaggerated fad article I stumbled across in some media outlet. Finding a college nutrition book was one of the best things that ever happened to me.
 
well that's a very good point to bring up but irrelevant to the subject matter at hand. my point that I brought up earlier was anything "deep fried in sugar and butter grease" is terribly unhealthy. the health advantages are greatly outweighed by its disadvantages. i'll be looking for your "exclusive french fry diet" book in the meanwhile....

adding to the list of ways to add fat to vitamins, you can also slice them thin and make sweet potato chips. throw a little chefs seasoning on and dip in ranch.
 
Roasted with olive oil, garlic, maybe some pumpkin/carrots/normal potatoes thrown in the mix, and a drizzle of balsamic vinegar :D As ikkya said rosemary is also awesome!

True, you make some good points An Iz. Some fats are healthy (and essential) in small amounts, in a balanced diet. There are some that are just plain "bad" though such as saturated & hydrogenated fats. The only relatively healthy saturated fat source I'm aware of is virgin coconut oil (correct me if I'm wrong?).

So what are the healthiest oils to bake with or shallow fry with? I've been using olive oil for baking & rice bran oil for stove-top cooking as it has a higher smoking point. Any suggestions?
