The coffee apprecation thread

The restaurant at the place I work does Starbucks coffee and insist you ask for a "Grande" or a "Vente" rather than a medium or large, can't help feeling more of a twat than usual ordering a Grande cappuccino with 2 extra shots8)

There's an episode of some TV show (I can't get Curb Your Enthusiasm out my head but I don't actually think it's that) where the guy goes mad in the coffee shop because you have to ask for "vente" rather than a "large".
 
How do you froth your milk, MM (or anyone that likes a cappuccino)? I have an espresso machine too, which can steam milk into a froth, but it's actually shit at it and takes ages to get a decent froth.

So a guy I know mentioned he froths his milk by putting it in his cafetiere and pumping the press through it. I tried it and it's actually very effective, can get a cup of very frothy milk in a few seconds.

If your machine gives out a decent jet of steam then its not the machine, it's you ;) You need very cold, very fresh milk & a very cold stainless steel jug, and theres a certain depth you put the nozzle under the surface of the milk but I can't remember it. Theres lots of techniques but I'm no expert

cafetiere frothing is wrong.

put just about 1mm of the steamer into the milk, move the jug round on a tilt in a circular motion, keeping the nozzle just a mm under the rising froth surface. When it's frothed as much as you want, put the nozzle in deeper to steam the milk to the right temperature... Just move the jug up and down while you are steaming the milk.

Is it definitely producing a good jet of steam? have you taken the nozzle apart and cleaned out any clagged up old milk that will be in there?
 
I'll try following your procedure and see how that goes. I was just sticking the nozzle right into the milk. NO-ONE TOLD ME!

I want a cup now actually so here comes the test...
 
I am reliably informed that drinking Cappuccino after 11am is a sure sign you are homosexual..according to the hardline Italianos anyway.

I have regularly done so myself... **note to self..must find hairy bear**

Illy is lovely , but as I need a quick hit early in the morning its Kenco Colombian and right out the door, tastes great for an Instant , about the only one I would drink now
 
OK the MailMonkey froth technique is a big improvement. But I can still get MUCH more froth with pump action cafietere style. Not sure which I prefer yet.

Part of the problem is the machine's steam nozzle seems a bit short. I have a stainless steel jug and I put milk in it but I couldn't reach it with the nozzle!

Any jokes you're thinking, I have already thought.
 
Try Googling 'milk stretching' - that'll give you a food idea of what you're after. There's a real difference between the froth used on top of cappuchinos and the stretched milk used for flat whites and lattes. I've got a milk frother in the cupboard that's just like a big caffetiere that you pump up and down - does good froth but fails at stretching.

hmmmm, cafetiere froth won't be right...

if you can't get it as good as cafetiere frothing, you're definitely employing the wrong technique, or there's a problem with the frother. Have you unscrewed any nozzle attachments, and checked them VERY closely for blockages?

If the frother is working properly, and with the right technique, you should be able to have froth almost standing in a tower, proud of the top of the cup, like stiff beaten egg whites....

When you doing the initial bit knock, hover the nozzle between 1mm into the surface, and a few microns over the surface, you want the steam to be catching airbubbles on the way into the froth, I reckon fine tune your technique a bit...assuming your nozzles aren't blocked with smegma.
 
Filter is way to weak for me, with a cafetierre you have a level of control over the strength, for obvious mechanical reasons.

Espesso is really the only way.

I do love me a quality espresso, however since I like the taste of good black coffee so much I prefer a nice brand of filter coffee since its more delicious liquid to drink.

Plus I'm a little sensitive to caffeine, one double espresso and I'm raring to go for the next four hours hehe

I knew there would be loads of coffee snobs in this forum, goes along with drug snobbery
 
I drink instant most of the time, only the brand I quote before;)

I am seemingly immune to caffeine these days, at last it never makes me feel in the least bit jittery even after epic amounts of coffee.

I'm not sure I'd call my attitude to a good coffee snobbery, I do drink cappuccino on occasion but it's mainly espresso or very strong black instant with no sugar so it has to taste decent or I'd rather a can of relentless TBH
 
Were you always fairly tolerant to caffeine? I used to be quite sensitive to it at the beginning when I was younger, like I'd even feel stimulated from a normal cup of tea. Not so much any more but if I have a decent amount I definitely feel it.

I was reading the caffeine section of Erowid and there's some right crazy addiction stories to coffee lol
 
Not sure, it's been so long.

I have stopped completely more than once with no ill effects and cut down dramatically, I just think its a YMMV thing.

Coffee gets a really bad press with the mental health people I've spoken to, they sight it as a major contributor to anxiety. Having tried going without I don't think that's the case for me.

Also of interest this stuff is exactly the same as the other one I quoted but there seems to have been some kind of mess up on branding and they're selling this one off cheap :-

I usually go through tea phases and coffee phases although when in my coffee phases i just usually go with instant because im a lazy cunt. Yes fresh coffee tastes a lot nicer but sometimes i find it too rich and overpowering for what im looking for at the time. hmmm all this coffee talk has made me want some..
 
Can all these people talking about instant "coffee" please post in the Lounge coffee thread, rather than debasing this one please.
