I am so digging Remixes of Dominik Eulberg's Daten-Übertragungs-Küsschen.

I highly recommend this track in particular (it's almost 20 minutes long):

It just has such a good flow to it. Minimal, yet full of layers and changing sounds.

EDIT: Can anyone recommend me some more minimal that has a nice groovy edge to it? No commercial stuff plz!
