I love the late date section in Tesco especially for red meat, the nearer it is to its prime condition, the cheapest it gets, though it can be a bit of a dutch auction waiting for a rack of lamb to reach its sell by date. I got 250g of sirloin there yesterday for €1.80 down from €6.00, I chopped it finely and sauteed it for a a minute then flambeed it with ASDA vodka, deglazed the pan with a couple of glugs of Beck and then removed the steak and reserved. In the same pan I added olive oil, garlic, a stick of celery and a small onion and cooked stirring all the time until the first hint of discolouration, I then added butter and thymes leaves and reduced the heat to allow the pan contents to sweeten and soften. I then added a little beef stock, half a jar of passata and cooked for 10 or fifteen minutes. I finished by adding a spoon of creme fraiche and warming through the reserved beef and its gravy. I seasoned with crushed black pepper, Maldon and parmesan and also stirred through some salad leaves that I found in the fridge and served with Linguini (I had no spaghetti).
Enough for two adults and a toddler.
You can also make this dish with leftover Sunday roast, but if you do this, don't remove the beef allow it to cook in the tomato sauce.
