Tbritton's chicken and sausage gumbo

This is not a quick and easy recipe but it is wonderful if you have the time to make it! It can take anywhere from 1-3 hours in prep and an hour to cook to all day in prep and an hour to cook, depending on how thick you want the roux to be.
Ingredients:
2 large white onions
2 bell peppers
4 ribs of celery
4-6 cloves of garlic
4 quarts chicken stock
2 bay leaves
2 teaspoons creole seasoning
1 teaspoon tyme
2lbs andoiulle sausage
4lbs chicken
1 cup oil
1 cup flour
white rice

Prep
chop all veggies;set aside
chop or mince garlic(works either way)
brown chicken,cool
chop chicken and sausage
boil rice

In a skillet(iron skillet works best if you have one)
mix flour and oil heat over medium for an hour stirring frequently(if you want the roux dark and thick heat over low all day keeping an eye on it. the local restaurant owner cooks his slowly for 3 days but we have never gone that far with it!)
when roux is as dark as you want it add veggies, stir constantly for 4 minutes
pour into large stockpot add chicken ,sausage ,garlic and seasoning(except parsley) bring to a boil reduce heat, simmer 1 hour
add parsley cook 5 minutes

serve over rice( we also make corn bread with it)
this recipe makes alot of gumbo, great for parties or leftovers(we typically freeze half)

Nowonmai, I may end up at the Japanese place up the block tonight thanks to you. :D I did an impromptu green bean rice bowl tonight with just shit I had laying around in the house... but I LOVE that kelp flavor, and it's good for me.

Has anyone ever made a turducken? I've never made one but have had very favorable luck with poultry for holidays. See here for the prize of my amateur culinary career

Chicken in a duck in a turkey, long story short. Cajun Grocer offers it and I might make one this T-day if we don't end up going out.

And this is a long range project - but have any of you with more time on your hands and better desktop publishing skills than I thought about what if we *did* make a Bluelight cookbook? I think I could easily contribute 5 original recipes that I came up with on my own. I can't be the one to get this off the ground because I have too many commitments already - but I can help with editing at the end. If anyone's bored, wants a project, and will do it well - volunteers needed, this is a long time in coming!

I've had this on my mind for a long time now... to the extent that I pulled all the existing recipes down and formatted them nicely and all... but that was about a year and a half ago, and I'm pretty sure I don't have it any more.

That said... I have plenty of time on my hands these days... my right leg is wrapped in plaster and ironmongery after surgery.

I've set up a collaborative document in Google Documents (formerly Writely) that we might use to just get all the stuff together in one place. If you're interested, PM me your email and I'll add you to the list of collaborators.

Sugar cookie frosting (really good on cupcakes too!)

1 1/3 sifted confectionay sugar
1 tsp vanilla extract (more if you like the taste)
1 tbs milk
1/3 cup butter
1/2 cup cream cheese (optional)

Cream together.
Spread on cooled cookies.

SOOO good hehe.

Vegan Alfredo Sauce
Category: Main Dishes - Pasta

Suitable for a: vegan diet


Ingredients:

Garlic
Salt
Pepper
Earth Balance
Olive Oil
Coconut Milk
Lemon Juice
Nutritional Yeast
Soft Silken Tofu
Nutmeg


Instructions:
------------------------------------------------------

A. This is a saturated fat bomb.
B. Amounts of ingredients may be hazy. I do a lot of things to taste.

1. Mince ~8 cloves of garlic.
2. Sautee garlic in a mixture of Earth Balance and olive oil (you can control the amount of oil).
3. Add like half a can of coconut milk (~8 oz?).
4. Bring to a low simmer.
5. Stir in ~1.5 TBSP of nutritional yeast.
6. Stir in ~1 tsp lemon juice.
7. Salt and pepper to taste (you will likely want a lot of pepper).
8. Add a smidge more than 1/8 tsp of nutmeg.
9. Taste and adjust seasonings.
10. Add ~6.25 oz soft silken tofu. Blend with a hand blender. Don't have one? Dump sauce in a blender and blend with tofu.
11. Taste and adjust seasonings.


Additional comments:

I usually add this to linguini, broccoli, and tofu or faux chicken. Garnish with olives.

Vegan Stroganoff Sauce
Category: Main Dishes - Pasta

Suitable for a: vegan diet


Ingredients:

Mushrooms
Garlic
Onions
Knor Wild Mushroom Powdered Soup mix
Water
Nutmeg
Dry Mustard Powder
Toffuti faux Sour Cream
Pepper
Earth Balance


Instructions:
------------------------------------------------------

A. This is by no means healthy. As I prepared it, this recipie contains both MSG and hydrogenated oil.
C. I did not contact Knor to see if the "natural ingredients" in their mushroom soup are all plant derived.
B. Amounts of ingredients may be hazy. I do a lot of things to taste.

1. Mince ~5 cloves of garlic and half a medium sized onion.
2. Sautee in Earth Balance.
3. Chop a good size mound of mushrooms (I dunno. Like a pound?).
4. Sautee with vigor.
5. Add mushroom soup mix and ~ 8 oz of water. Stir and bring to a low simmer. If you'd like, you could probably sub veggie boulion and a splash of dry white wine for the soup, but you would have to add cornstarch or something to thicken.
6. Add like a bit more than 1/8 tsp nutmeg (I think...maybe more).
7. Add 1/4 tsp mustard powder.
8. Bring heat down to low. Add faux sour cream (you could make your own instead of using the tofutti) and water until you reach the desired consistency.


Additional comments:

Serve over fettucini. Consider adding chickpeas, tofu, or faux beef.

i'm going to be making dinner for 40-50 people at the local ronald mcdonald house. i don't want to make pasta or lasagna because the woman i talked to said thats what people always tend to make. i was thinking meatloaf and potato soup.

but i wonder if any of you had suggestions for other things that are affordable and decently easy.
 
the only thing i can think of at the moment would be shepherds pie, cheap and easy...when do you have to have it done? i can dig out some of my cookbooks and try to find recipies
 
^not till december. i am just trying to think up ideas right now.

i'd like to stick with meat being separate from the veggies incase there are vegetarians staying at the house.
 
ooh good point! didn't think about that, so most casseroles are out then. i have an awesome cookbook for large parties, but i cant find the damn thing.(though while looking i found several things of pictures and another of my drawing i thought i had lost lol), ill keep looking for it for you. i have some really yummy things i usually make for big dinners but theyre not typically cheap. do you have a large kitchen to work with?
 
i have a chicken dish that if you can cook a lot at once its really nice but i have never done for 50 people

it is a lot of work for that many people but if you ever want to use it for a smaller party

chicken breast(boneless/ skinless)
shredded italian cheeses( i buy it preshredded)
spaghetti sauce( i use prego 3 cheese)
italian seasonings

cut the chicken breast in half
stuff with cheese
season
bake until chicken is fully cooked(@350)
pour spaghetti sauce on top
add shredded cheese on top
bake until cheese is melted and sauce is hot

i usually make this dish for 10 people i buy the chicken in the freezer section at aldies or walmart(it comes in a bag) it is much cheaper that way and you cannot tell the difference
 
does anyone have a recipe for spaghetti sauce from FRESH tomatoes that dosen't end up tasting like boiled tomatoes? The only recipies i can find call for paste and i want to make it from scratch
 
*vegan smooth bean soup

ingredients:
2 lb/1kg borlotti or red kidney beans(soaked overnight and drained)
1 onion finely chopped
4 tbsp of ex. vir. olive oil
2 tbsp tomato concentrate/puree
fresh sage and rosemary to garnish
salt and pepper to taste
3 quarts water

instructions:
cook beans in a large pot with enough water to cover for about 1 hour or until tender
season with salt
sauté the onion in a large sauce pan until lightly browned
drain the beans
add to the pan and cook for three minutes
pour in the water partially cover and cook on med-low for 75 minutes
remove from heat chop in food processor until smooth
return to pan and stir in tomato concentrate
cook 5 minutes
season with salt and pepper and stir in remaining oil
garnish and serve hot
 
* vegan flower soup

( i have not tried this, it just looks interesting!)
ingredients:
4 oz edible flowers(daisy,cornflower,mimosa,lilac,pansies,roses,nasturtiums)
1 quart boiling vegetable stock
white of one leek thinly sliced
2 tbsp extra vir. olive oil
1 large potato boiled and mashed
(optional) 1 tbsp all pourpse/plain flour mixed in 3 tbsp water
salt and freshly ground pepper
plain croutons(to serve)

set aside a few flowers;finely chop remaining flowers
boil in stock for 10 minutes
saute the leek in oil 10 min or until lightly browned
mix in flower stock and mashed potato
if the soup is too thin stir in flour/water to thicken
season with salt and pepper
cook 10 min stirring constantly
serve hot with flower garnish and croutons
 
no problem i will try to post more later :) if anyone has vegetarian/vegan recipies that do not use potaoes, pasta or flour please post them! I am having a hard time finding stuff i can eat on my new diet :(
