So, I just screwed up this old version and wasted about 15 min of my time. I hate my life.


Inspired by Shal's plea for help, as he can not cook and now needs to know in order to please the ladies ( ;) ), I have decided to create a thread where you can share some simple recipes for those of us just starting out. [Edited to "The Recipe Thread" now that many of these recipes are not so quick and simple anymore]

I will update this first post, providing some form of an "index" so the recipes can be easily found.

Don't be scared to ask questions, or let us know how you went on your first attempt at preparing one of these meal ideas!

Post away kids - and if you are sharing more than one recipe, please place them in seperate posts so as I may hyper-link them easily :)

This is so quick to make and absolutely delicious. It sounds strange but believe me, the flavours come together *really* well. (it's also weight watchers friendly ;) )

Beef Wellington - for one

1 small piece of GOOD eye fillet steak (it's worth buying a nice piece for this, it's so succulent)
1tbsp low-fat sundried tomato dip
1 small mushroom, sliced
2 sheets of Fillo pastry (don't worry if it's 3 or 4 sheets, they're really hard to seperate!)
Cooking spray

Preheat oven to 180 degrees C. Spray a baking tray with the cooking spray. Lay your Fillo pasty on it and place the piece of steak in the middle. Mix your dip and mushies together and spread on top of the steak. Wrap the steak up in the pastry so it's like a parcel. Quick squirt of cooking spray over the parcel. Bake for 20- 25 minutes.

Serve with mashed potata & broccoli. Yum. There's something about the pastry that keeps all the flavour in.
 
Square Creamy Chicken & Mushroom Pie!

This one is great for winter :)

Ingredients:

  • 3 Chicken Breasts
  • 1 Red Capsium/Pepper
  • 6 to 8 medium sized mushrooms
  • 1 packet of pre-rolled puff pastry (will make 2 pies)
  • 1 packet of Continental's "Creamy Mushroom Chicken" Mix
  • Margarine
  • Sour Cream

Instructions:

Remove the puff pastry sheets from the freezer and lay along the bench, allowing to defrost (should only take 5-10 minutes), pre-heat your oven to 180 degrees celcius and turn your frypan on to heat up.

Finely chop the chickenbreast, mushrooms (be sure to peel or wash them) and capsicum.

Put a teaspoon of margarine in the frypan and add your capsicum and mushroom, fry until the mushrooms are cooked and then remove and place into a bowl.

Allow the frypan a minute or so to re-heat, spray with cooking spray and then add your chicken, cook until lightly browned and then remove and place into the bowl with the capsium and mushrooms.

In the bowl, add the continental mix, 3/4's cup of water and stir through. When mixed, add a teaspoon of sour cream and stir through again.

Get a lasagne dish (I always use lasagne as it's bigger, you can use a pie dish if you prefer) and spray with cooking oil. Line the dish with a layer of puff pastry, trim around the edges and put the cut-offs aside.

Fill the dish with the bowl of chicken/mushroom/capsicum and then make a "lid" for your pie with puff pastry. Stab one or 2 holes in the lid somewhere to allow the steam to escape.

With the cut-off's, use a can or jar to roll them out flat and make cute little words or pictures out of pastry to stick to the top of your pie for fun :P

Cover the pie with foil (careful not to have too much contact with the pastry) and place in the oven for 25 minutes. After that time ahs passed, remove the foil and bake for another 15 minutes or until the pastry is nice and golden.

You will then have a deliciously yummy Square Plur Pie!!!

I thought beef willington was supposed to use Filet Mignon? Beef wellington can be a pretty fancy shmancy meal, considering the only places I've ever seen it at charged at least $20 for one plate (but it came with Bernaise sauce....mmmmmmm).
 
You can use any cut of nice fillet steak for it. In the restaurants they use a creamy sauce in the pastry - I think Weight Watchers adapted using dip to make it low fat- but believe me, this version works really well. My bf wants it again next week!
 
hrmm well i am a pasta sauce queen, heres one of my sauces, all u have to do to make them is add all the ingredients into a small saucepan and heat and stir a bit. then when its done add it to ure fave type of pasta!

Pasta a la glandular (i had glandular fever when i came up with this recipe):
*diced tomatos
*tomato paste
*cream
*lemon juice
*pepper, salt, basil, chives
*chopped almonds

Yeah I found a ton of recipes on the net for the creamy version, but they all looked like a pain in the ass so I'm leaving them out of this thread. Thanks for posting the simple version, shit I might have to make that shit sometime soon.
 
Greek salad

Greek Salad

Chopped tomatoes, red onion, green pepper, cucumber.

Olives (whatever kind you like, really).

Crumbled feta cheese (LOTS).

Olive oil & balsamic vinegar to taste (you are supposed to wisk these together and then pour over salad but I am lazy and usually just pour about a tablespoon of olive oil and a couple tablespoons of vinegar over the salad and mix).

You can also use different vinegars (ie red wine vinegar) or add some herbs (ie oregano).

And if you want to make it a little more substantial, add some cooked and cooled spiral pasta.

You can make a big salad and eat it for the next few days. Or throw it in a pita pocket, add chicken, whatever.
 
Here is one of my all time favorite quickie recipes, which I learned from my korean friend. All the recipies for it are the exact same, and it is ridiculously simple (so here's a cutnpasted version off the net).

Bul Kogi (Korean barbecue)

Amount Measure Ingredient -- Preparation Method

2-3 pounds (boneless) Beef short ribs (can usually be found in korean/japanese markets)
2 each Cloves garlic -- crushed
1/4 cup Sesame seed -- toastd/crushd
1 cup Grn onions -- finely chopped
1 teaspoon Pepper
1 teaspoon Sesame oil
2 cups Soy sauce
1 cup Sugar
1/4 cup Oil

Place short ribs in bowl. Add garlic, sesame seeds, green onions, pepper,
sesame oil, soy sauce, sugar and oil and toss to coat meat well.
The gangster way to eat this is to prepare the marinade and marinate the beef for at least a day, leave it in your refridgerator and fry up strips of beef whenever you are feeling hungry that week. Even better with some steamed rice :)

Anyone got some really good soup recipes???

To help out, I dont like noodles in soup or thgose pea things they use.

I want to make up some bulk ammounts this year and freeze them including..........

Chicken soup.
A special pumpkin soup
Potato soup...........I had this once at a restaurant and it did have a bit of meat and some other stuff..........it was so thick and tasted just wonderful but have no idea how they made it.

Any other really good soups?

Oh I really like them to be nice and thick if possible.
 
Pumpkin soup

1 butternut (I just prefer these)
3 sweet potatoes (the orange kind)
Veg stock
1 red onion
some sugar
fresh coriander
olive oil
salt & pepper
sour cream
Peel and core the butternut. They're tough fuckers, so watch your fingers. Chop into small (thumb sized) cubes. Peel one of the sweet potatoes too, chop it into similar sized pieces. Finely chop the onion.
Put the chopped pumpkin and sweet potato in an oiled roasting tray along with the onion bits. Sprinkle with a light dusting of sugar, salt, pepper and chopped coriander.
Bung in the oven for about half an hour at 180C.
Meanwhile, chop up the remaining pumpkin and sweet potato. Put in a large pot. Cover with water. Add salt and place on a burner to boil. When this reaches a boil, reduce the heat to keep from boiling over.
After about half an hour, remove the other stuff from the oven. It should be nicely caramelised at this point. Tip the lot into the simmering pot and let bubble away for another 10 minutes.
At this point, add about half pint of boiling water with a stock cube dissolved in it... if you're lucky enough to have real veg stock, substitute that :)
Get your trusty potato masher and give the pot a good mashing until there are no bits left. Add more stock if necessary at this point to get a smooth, soupy consistency.
Let sit for another 10 minutes to let the flavours merge. Add some more salt, pepper and chopped coriander to taste.

Serve... add a spoon of sour cream to the middle of each bowl and sprinkle with a little chopped coriander.
 
oh that sounds so yummy and really different to how I have always done it which suggests it will be so much nicer.

One question.........how much of the pumpkin do you use in the oven??........Im guessing 1/3 like the sweet potato??

Oh and yes butternuts are just the bomb and I love the idea of using sweet potato..........I love them.
 
Learn how to make onion caramel... it's a base for loads of stuff... onion mamalade... french onion soup... chutneys.

It's dead simple too... chop up some red onions... put in a large pot with about an ounce of butter, a tablespoon of sugar, some mustard seeds and a drop of red wine. Add about a cup of water and place over a low heat. Let it bubble away until the water evaporates and what's left is a sticky mess. There's your onion caramel.
To turn this into french onion soup, add veg stock and whatever herbs/spices suit you and simmer for about 20 minutes.
Serve into bowls... place one buttered piece of french stick in each... sprinkle with your fave. medium fat cheese (edam/cheddar/gouda/emmenthal) and place under the grill for a few minutes (until the cheese starts to bubble)

Beef Wellington uses foie gras, not sauce, and truffle, not mushroom. That is why it is so expensive. Without foie gras or truffle, it should REALLY just be called Beef Pot Pie! :)

here are two recipes i just made up. this first one is a sauce and veggie mixture you can toss in any kind of pasta.. i like to use stuffed tortellinis, but you can just boil spaghetti noodles and add it in instead.

1 cup kalamata olives, chopped finely
2 cups cherry tomatoes, halved
3 artichoke hearts, chopped roughly
1/2 a package of feta cheese, crumbled
1/2 cup basil pesto
1/2 cup balsamic vinegar
1 cup olive oil
salt and pepper to taste

basil pesto (blend all ingredients together w/processor or blender):
2 tablespoons fresh basil, minced finely
1/4 cup pine nuts (or nut of choice)
1 1/2 tablespoons grated parmesan cheese
1/2 cup extra virgin olive oil

1. combine tomatoes, olives, hearts, cheese, and pesto in a bowl. mix together.
2. put vinegar in a separate bowl.
3. while whisking the vinegar firmly, *slowly* drizzle in the olive oil.
4. continue to whisk firmly until olive oil is fully incorporated.
5. combine mixture with tossed ingredients.
6. mix with your pasta. season w/salt and pepper accordingly.

the pesto is just an extra, you can use the jarred pesto they sell in stores, too.

chicken soup is super easy.
basically... just take a half chicken (or whole, depends on how big your pot is) clean it. boil a big pot of water. put the chicken, a dash of salt and pepper, a bay leaf, a stalk of celery and carrot, and a small browned onion (burn a bit of the outside over a flame. or if you have no flame, just throw the onion in) and let simmer covered for two hours, stirring occasionally. strain the soup and pull apart the chicken into bits and put back into the soup. add noodles or rice if desired or just freeze the lot for later. :)
 
Another great trick to know is deglazing a pan after frying something in it. Use something acidic like wine, balsamic vinegar, rice vinegar, brandy, whatever depending on what it is you've just cooked. After you remove whatever it is you've just cooked, pour a few splashes of your deglazing agent into the pan... leave on the heat while scraping the residue to remove from the surface of the pan (you are using a spun steel pan, aren't you? :D)... the acidic component should boil off vigourously leaving a mucky looking liquid consisting of the residue from cooking and your deglazing agent. Add some heavy cream... more than enough to make a good amount of sauce.. also add a small amount of salt and pepper. Allow to bubble away for a bit, but keep stirring so it doesn't burn or form a skin. When it's thickened a bit (from reducing, or boiling off the water in it) you can pour it over your meat/fish/whatever.
If you're making a sauce for steak this way, throw in a handful of green peppercorns towards the end of frying the steak... use rehydrated or pickled ones rather than the hard little fuckers :)
