Shal/Hon, can you guys keep this thread updated when people add to it? I've barely been on bluelight in 3 months, I can't really keep tabs on it anymore.

^no, but i have a vegetarian chili recipe!

1 huge onion
1 can corn
1 can great northern beans
1 can kidney beans
1 large green pepper
1 can stewed tomatoes
1 can salsa
1 can diced tomatoes
chili powder to taste
cumin to taste
sugar, salt, pepper to taste

chop the onions and peppers in medium sized chunks: not large like stir fry, but not small like chopped onions on a hot dog or something. sautee them in a big pot for about 10 minutes while you open the cans of everything else. once they are a little less crunchy, add the corn and the beans. then add the cans of sauces and stuff. then add the seasonings to taste and warm up on medium heat. let simmer for 10 minutes while you clean up and chop a green onion.

serve immediately (because its veggie it doesnt need to simmer!) and top with a dollop of sour cream, some shredded cheddar and a hefty amount of green onion.

sooo quick and easy to store!
 
Nice that was gonna be my next question... I'm planning on making a big batch of chili for my house/friends and many are veggies (I usually just eat chicken/seafood at this point)

South American chilli beef

750g beef, cubed (chuck, or stewing steak)
2 onions, diced
4 field mushrooms, diced
1 red capsicum, diced
3 green chillies, chopped
2 cloves garlic, crushed
2 tsp cumin
½ tsp cinnamon
1 tsp ground coriander
1 1/2 – 2 cups beef stock (start with just 1 cup, you can add more later if needed)
3 tins chopped tomatoes, drained a little (use just 2 tins, can add more later)
1 tab Sugar
1 tab chilli paste/sambal olek
25g dark chocolate, chopped (good quality, use mexican if you can get it)
2 tins kidney beans
chopped coriander

salsa
avocado, sliced
½ red onion

brown the beef, then remove.
Sautee onion, mushroom, capsicum garlic and chilli.
Then add the spices, toss to toast.
Add the beef, stock and chilli paste, bring to the boil.
Then turn down the heat and simmer for approx 1 ½ hours till beef is tender.
Then add the chocolate, tomatoes, kidney beans and sugar. Turn the heat up and simmer till the chocolate is melted.

Salsa
Thickly slice the avocado, finely dice the onion.
Place in a bowl and mix, kind of chopping the avocado with the fork.

Serve beef with salsa and sour cream.


this recipe makes heaps, and is one of the tastiest things i've ever tasted

An even simpler version of a similar chilli/red bean thing I make when I'm broke goes like this:

INGREDIANTS:
1 largish brown onion
as much garlic as you like
2 red chillis
2 cans of diced tomato
1 large can (800g or so) of red kidney beans
couple of spoonfuls of tomato paste
ground black pepper
salt
paprika
chilli powder as well if you like it real hot
oregano
about 500 g of basmati rice
cheese to grate on top at the end
*optional!* 500g skinless chicken breast fillets, or same amount of sausage or something meaty

METHOD
dice onion
brown onion in olive oil or whatever
meanwhile chop chillis and garlic
add garlic, chilli and a good pinch of paprika (and chilli powder if you like)
stir it around on med-high heat for another minute
add cans of tomatoes and red kidney beans and tomato paste
grind in the pepper, add salt and oregano and simmer for at least 30 minutes
you might need to put in a splash of water whenever it looks necessary if you're doing other stuff and you want to let it simmer for longer (it can cook for ages, no set times here)

Serve on basmati rice, grate cheese on top and voila! A very cheap, tasty and fairly nutritious meal. This will serve 6-8, you can freeze the leftovers in serving sized portions and it still tastes just as good.

If you're feeling a bit richer this dish goes even better with some chicken in it. I like to cook my chicken (500g skinless breast fillets) in the microwave while chopping and browning onions as I'm paranoid about uncooked chicken. (If you're confidant with cooking chicken then do what you normally do) Dice or shred the chicken and chuck it in after the garlic and paprika bit, coat it with mixture while letting it brown , then add the tomato and kidney beans etc and let it simmer for at least 30 minutes. Tastes great, serves a lot of people for under an australian $ (sans meatiness) per serve, or around $2 per serve with meat.

well i've never had or seen the mexican chocolate you're suppossed to use in this dish, but i just use lindt 85% (i think) dark chocolate.
the chocolate is so dark that it really doesn't taste sweet at all, but it adds so much depth to the flavour.

chocolate it used quite a bit in mexican cooking i think.

goopy chicken

goopy beer chicken

12 oz of beer (it doesn't mater what kind)
2 cans of cream of chicken soup
3 tsp of soy sauce
2-3 cups of crushed up pretzels
4-5 boneless skinless chicken breasts
5-6 red potatoes

1. preheat the oven to 300F
2. wet the chicken and toss in the crushed up pretzels. the coating doesn't have to be thick, just make sure it is even.
3. in a mixing bowl, combine the beer, cream of chicken soup and soy sauce.
4. add the potatoes to the casserole dish and coat the entire thing with the goopy sauce.
5. bake at 300F for 1 hour and then enjoy!

this is a casserole type dish i like to make in the winter time. i like to add potatoes to mine, but you can pretty much add whatever veggies you like. i also like the added crunch of breading the chicken with pretzels, if you don't want to do that coating the chicken with flour and browning it works well too.

and the measurements are vague cause it depends on how much chicken you plan on using. you get enough sauce to easily fill up a casserole dish, but i vary the amount of chicken and veggie depending on how many people i am cooking for. and i love the sauce, so there is never too much :)

I made a near-enough version of your chili tonight and it went down a treat with my friends and myself (lindt chocolate included!) - thanks!
 
Okay, i don't want to get into it too much, but long story short i am now cooking chicken for my husband twice a week. (i had converted him to vegetarism for the most part with the exception of turkey on Thanksgiving with our families and fish randomly through the year (maybe 5 or 6 x tops) for the past 8 years.

So this is the deal. I need chicken recipes that involve veggies too that are mainly a stir fried dish. Think Chinese, Indian, or even Japanese. The dishes have to involve rice too- no potatoes.

I have tried quite a few Chinese recipes but not only do they take a few days to prepare and make, many of them aren't even worth the time. They suck !

If anyone has a really good recipe like this please help me ! Currently the only chicken dish he likes (from me) is curry chicken, mojo chicken, and chicken parmensan and i am sick of cooking them all and sick of making a new dish and having him not like it.

the goopy chicken recipe i posted is easy and fast. you can add any veggies you want. i've also made rice a roni and added it to the goopy chicken. it was tasty :) altho i don't think it is very healthy...
 
beaner--- pad thai is the best in the world. you can find pre-packaged stuff (the noodles and sauce) but i dont know if you'd like that. i use it because its quick, easy, and CHEAP!!

basically it's rice noodles, pd thai sauce, crushed peanuts, bean sprouts, any other veggies you like (i add onions, mushrooms and green beans) and my roommate adds meat of some sort (chicken and shrimp normally). it's a classic thai dish that is really simple and VERY good.
