DarthMom, that sounds good... but what is "EVOO"?

Also, I highly recommend ebola's vegan pizza recipe. The cheese isn't the same as sticky-icky mozzarella, but is delicious in its own right. It definitely won me over. ;)
 
that fruit leather sounds like what trader joes sell and its yummay!
 
Ah this is what I call a thread!

Practical, universal appeal (pretty much), semantics conspicuous by absence, and people prepared to let 'heretics' who don't eat the same or similar to thm just 'get away with it'!

YES - post it - it was also delicious in its own right and neither myself nor the other omnivores that enjoyed it missed the cheese proper.
 
sharp vegan "cheese" sauce:

~5 cloves garlic
salt (to taste)
pepper (to taste)
~ 1 tbsp nutritional yeast
a dash nutmeg
a dash mustard powder
a handful cashews
~ 1 tbsp light miso
~ .5 to 1 lemon's worth lemon juice
~ 1 tbsp tahini (optional)
1 lb silken tofu
~1 tbsp olive oil or earth balance
water as needed

Begin by grinding cashews in a blender. Add in all other ingredients, other than the fat and garlic. Blend to a smooth paste. In a saucepan, sautee said fat and garlic. Add all ingredients together. Taste and adjust (it is for this reason that all amounts are approximate). Stir thoroughly. Add water until you reach your desired consistency.

I made something nice and really easy for lunch:

Super Easy But Good Garlicky Carrots, Beans, Lemons, Herbs

*Get some water boiling, dump a handful of green beans in.

*Slice a medium carrot into super thin rounds for quick cooking.

*Mince four (or more) large cloves of garlic into teeny tiny pieces. Alternatively, grind in mortar and pestle with some EV olive oil.

*Heat some EV olive oil on medium, then stir the garlic and brown.

*Assuming you did the above relatively quickly, strain the beans and dump into cold water. If not, bump this step up a few notches.

*Carrots can be added to the garlic at this point. If the beans are long, slice to desired length.

*Stir it about. Add beans. Stir once more. In a couple of minutes, season with salt and pepper.

*Squeeze half a lemon into it, mix. Add a few leaves of mint and flat-leaf parsley.

*Eat while hot over rice or bread. Preferrably rice.

I guess it would be nice to add some little sliced raw radish at the end. Maybe next time
 
Spaghetti with garlic, chilli, lemon, rocket, cherry tomatoes, and parsley.

Crush 4 garlic cloves
De-seed and chop 2 red chilli's
3 table spoons extra virgin olive oil

Add to low heat pan.

Chop 6-7 small cherry tomatoes in half
Put pan to medium-high and add tomatoes.

Cook pasta. When the pasta is cooked I like to add salt, pepper, and a small amount of butter or olive oil and mix in the pasta.

When the tomatoes have started to break and all the flavours are infused add the pasta bit by bit into the pan.

Toss, squeeze a little lemon juice and add in some rocket..as much as you like! The heat should be on low-med..keep tossing until the rocket has softened alot. While tossing the tomatoes may break...this is good!

Once tossed to your liking, add in some roughly torn parsley.

Serve!

Prawns can be added in which works well. Or also use some chilli or lemon infused oil for a little extra kick.

Easy and very tasty!

hey guys, i used to make a very easy spaghetti with a raw egg thrown in and perhaps some parm and seasonings, but it was so long ago i don't recall exactly how, or if i am nuts. anyone familiar with this?

speaking of easy pastas, this is one of my faves:

boil broccoli till soft, then add some thin spaghetti to the boiled broccoli and water. cook till pasta is done...

drain. in the pot, saute some minced garlic in EVOO.

pour the oil and garlic over the spaghetti/broccoli...and top with lots of fresh parmesan.

it is super yummy and so easy. perhaps someone can play around with other herbs, but to me, it doesn't need anything.
 
Ah sorry, only know it as rocket. I love it!

just tried this again tonight but added some snow peas, and frozen minted peas. worked a treat!

Carbonara. One of my favorites :-).

Render some bacon until it's as crispy as you'd like it. Drain it, but reserve the fat. In a mixing bowl, break a couple of eggs, grate in a lot of fresh parmesan, and crack a lot of pepper, and put in some bacon fat for good measure. Drop in your cooked pasta and toss. The warmth of the pasta will emulsify the bacon fat and the eggs, and the parmesan adds a nice bit of salt....

Fantastic pasta.
 
excellent!! thank you very much. can't eat it anytime soon, started a new diet :D but as soon as i can i will...

speaking of bacon fat, i looooove this salad....

fry up a few pieces of bacon, reserve the grease and mix in a bit of vinegar and sugar and water, and toss with crumbled bacon and green leafy lettuce and tomatoes.....yuuummmm

sorry i can't be specific with the amounts, i taste as i go.

does anyone have tips to make them a bit less rubbery? and if you have any really good recipes with em, let me know. thanks!

i am trying to work em into phase one south beach diet...but any recipes are welcome.

i think i am going to try them with some pesto sauce and chicken tonight
