anyone got any easy to follow how to cook indian food from scratch recipies?

have to be able to get the ingredeints in tescos or something too tho :/
 
Google 'easy curry recipes', tons of stuff.

You'll just need some meat, onion, garlic, any veggies you want to go in, stock cube (or just water will probably suffice) and some spices. Whole spices are better than powdered stuff, fresh even better if you can get it but aside from fresh ginger and nutmeg haven't seen anything else in Tesco. Also some corriander works well with most curries for garnishing. Some chillis too if you like it hot.

Or do this for something fairly quick:

Dry roast (fry) some whole spices on a lowish heat until they start to smell really aromatic.

Make a paste by blending together garlic, chillis & fried spices, add a teaspoon of vinger, oil or water if too thick.

Fry onions for a couple minutes till soft.

Add curry paste and meat and fry on highish heat for few minutes till meat is browning on outside.

Add water or stock and turn down heat to simmer.

Cook for 30mins + or till when meat is cooked & tender.

Add corriander.

Done!
 
Na Boa's patented Lamb Pasanda recipe:

Ingredients:

ghee (could use oil, or butter even)
(EDIT: nearly forgot, stick a couple of bay leaves in at the beginning too)
650g - 1kg lamb, cubed
2 medium onions, diced
3 cloves garlic, crushed
1 piece fresh ginger (about 1.5cm by 1.5cm)
1 red chilli
1.5 teaspoon garam masala
1 teaspoon turmeric
1.5 teaspoon cumin
1 teaspoon ground coriander
0.5 teaspoon ground cloves
0.5 teaspoon cinammon
2 tablespoon youghurt
approx 0.75pt water
100ml approx cream
50g almonds, ground
1 bunch fresh coriander

Method:

Heat up the ghee in a large pan till it's fully melted and hot.

Add in the diced onions, bay leaves and chopped chilli (seeds and all). Cook till the onions are nice and translucent and going a bit golden.

Add the lamb then the garam masala straight afterwards. Add the garlic and then grate the ginger into the mix whilst the lamb's cooking. Cook together till the lamb's nicely browned.

Add the turmeric, cumin, coriander, cloves and cinammon. Stir in the yoghurt and mix well. Add the water (you could even add a bit of red wine here, were you so inclined) and cover the pan. Leave to simmer on a medium low heat for half an hour or so until the lamb's nice and tender.

Stir in the cream and the almonds, mix well and simmer on a slightly lower heat for another 5 minutes.

Take off the heat and garnish with the chopped coriander leaves. Serve it with rice, bread, etc. For some well nice rice, cook it with a bit of turmeric and some saffron in the pan. Mmmmmmmmmmmmmmm..........................

If you boil and egg from cold water for 7-8 minutes the white is completely set but the yolks are still quite runny, good for salads. Will take longer for large eggs I imagine.

Servings: 1
Time: 5 minutes

Ingredients:

* 4 Tablespoons flour
* 4 Tablespoons sugar
* 2 Tablespoons cocoa powder
* 1 Egg
* 3 Tablespoons milk
* 3 Tablespoons oil

Directions:

1. Mix dry ingredients in mug.
2. Add egg and mix together.
3. Add milk and oil and mix.
4. Microwave mug and contents for three minutes.

This recipe has been floating around the Internet for a while but I had not yet been brave enough to try it. Blog reactions vary from “gross” to “amazing.” Let’s admit it: a single serving cupcake, made quickly and with the minimum of supplies? A cupcake whenever you crave one?! It must be too good to be true! Here is what I discovered…

Crack one egg into the mug. (If you are not practiced at this, you may want to crack the egg into a separate dish and then transfer it - but don’t worry, cracking eggs IRL is not as hard as in Cooking Mama.) Mix the egg very well with the dry ingredients.

Almost done! Add three tablespoons of milk and three tablespoons of oil. Mix completely.

Microwave the mug and its contents for approximately three minutes.

This part looks scary. The cupcake is going to rise in a large column out of the mug…oh god…

…only to collapse when you take it out of the microwave.

Results:
At this point I was looking at the unattractive top of my “cupcake” regretting this experiment. It looks awful.

Guess what? It tastes great! I was afraid it would be dry and rubbery, but it wasn’t - it was moist, and delicious too! The consistency was different than an oven-baked cupcake, more dense then I expected, but nonetheless chocolaty and satisfying! I will definitely be making this again.

Gone are the days when we must plan ahead for our cupcake cravings!

Mine was slightly rubbery, probably overdid it slightly. Not a bad flavour though considering. I reckon it'd be better still with a pinch of cinnamon.
 
I don't find the taste with those very good, not enough chocolate flavour. Try substituating some flour for more cocoa powder and adding some chocolate chips and cinnamon as TG said, much better.
 
I bought 3 punnets of kiwis for a £1.. thinking of making this, but feel the recipe calls for alcohol too... gin possibly =D

5. Pour mixture into a metal dish and place in the freezer until it just starts to set, about 1 hour. Using a fork, scrape set or frozen sides into the looser middle every 1/2 hour until firm, about 4 hours total. To serve, scrape entire mixture with a fork to lighten texture.

fav stew

ingredients

1 onion
3 carrots
2 parsnips
500g stewing steak
250 ml of veg stock
1/2 bottle of red wine
parsley (fresh)
rosemary (fresh)
2 cloves garlic

optional 1/2 butternut squash / artichoke

fry onion in a little olive oil and butter
add diced carrots,parsnips and meat into a casserole dish (don't brown the meat)
add veg stock,full parsley leaves,wine and optionals
180 in the oven for 3 hours

When serving, chop the garlic and rosemary together and drop a pinch on top of the piping hot meal.... order seconds
 
Two large fresh eggs - boil in a pan of water for 3 minutes and 40 seconds- meanwhile mediumly toast two slices of delicious wholemeal bread & lovingly butter with Lurpak butter. Slice the mouthwatering toast into "soldiers" (little sticks would be a better description) then remove pan of eggs from heat source & immediately cool under a cold running tap. Then slice off the tops of the eggs ( be careful to choose the pointy end of the egg or you risk a minor disaster) select a teaspoon to scoop out the tops sprinkle a little salt onto the lovely warm runny yellow yolks, then dip in a bit of toast - being ever so careful NOT to allow any yolk to dribble over the side.

How do you cook your boiled eggs? How long etc
I thought this was a joke! Does not everyone know how to boil eggs?
Actually no! When I was overseas to visit a friend, her husband of 2 years was telling me of some of her failings in cooking and housewife duties. He pointed at the ceiling where there were some black marks asking me to guess what would they might be. I told him to enlighten me, and he proceeded to tell me that she didn't even know how to boil eggs when they first got together. I told him that was rediculous, everyone knows how to boil eggs. Aparantly NOT!

He claimed that she left them boiling and went to sleep, and woke up by the sound of explosion. When the saucepan had boiled dry and overheated, the eggs aparantly exploded all the way to the ceiling coming down on his head. They tried to clean the marks to wipe off the memories of the episode, but made more mess trying to scrab!
Hence they decided to keep the memory of egg boiling ignorance for future reference!

I thought it is worth passing on the humorous event! I guess one needs to know how to boil eggs-afterall!!
 
1 bag of Quorn 'chicken like pieces' (someone who likes red meat should report back on the 'beef like pieces' they've just produced), 1x200g tub of cream cheese (Philidelphia or the like), 1 red pepper chopped to fuck!, 1 tin of sweetcorn, 1 bottle of sieved tomato juice, 1-2 habaneros chilli - as to taste, 1 piece of ginger (about 2cmx2cmx1cm), 3-8 cloves of garlic, 1 lime, allspice, cumin, coriander (leaf). Optional fennel & chives if you like those sorts of tastes.

Fry Quorn pieces in oil and while frying add cumin & allspice (a bit of allspice and a good bit of ground cumin). Add sieved tomatos, cream cheese & squeeze half of lime into pan with Quorn & simmer for a couple of minutes, then add ginger by putting in garlic press. Follow this with the garlic (in same garlic press - hey saves on washing up!). Next chop red pepper and however much chilli pepper you want - 1 is about right, 2 if you like to make your brain piss out endorphins! - and add to pan with drained tin of sweetcorn. Add a bit more allspice & cumin along with coriander leaf, chives & a little fennel & just say simmer for 15 mins. Serve it with roast potatoes, but be careful to let it cool a bit as the molten cheese part will take the lining off the roof of your mouth if you don't let it cool a bit (speaks from repeated incidences of mouth burning piggery ) =D

Excellent work with the pics, and step by step revision of what went on, you took us all through your real travelling attempts at cooking! Now I don't feel so bad when my cooking fails!
 
Oh, I don't know what you guys find in curry, I find it kills the natural flavor of the food!

(Cauliflower Soup)


This soup is so delicious but also healthy and easy and cheap!!! How can you beat that?

SERVES 4 (change servings and units)
Change to: Servings US Metric Close


Ingredients

* 2 teaspoons olive oil
* 1 teaspoon butter
* 2 leeks, washed and white part chopped
* 1 head cauliflower, broken up
* 1 potato, cubed
* 6 cups chicken stock
* 1 teaspoon garlic powder
* salt, pepper
* 2 tablespoons parsley, chopped

Directions


Add oil and butter to pan and heat. Add leeks and cook on low for 10 minutes.


Add cauliflower, potatoes and stock. Stir. Season with salt,pepper, garlic.


Cover and bring to a boil. Then simmer for about 20 min or until cauliflower and potatoes
are soft. Cool slightly.


Puree in a blender or food processor until smooth. Careful! You might have to do that in batches. Return to pan and heat. Check for seasoning. You might have to add some chicken stock or milk to adjust consistency.


Pour into soup bowls and garnish with chopped parsley.

I'll be marinating meat for one tonight I think and making it tomorrow. :)
