The Recipe Thread (EADD Version)

^I'm glad I was able to raise some interest, especially from a n00b. :)

Do you have any recipes you'd like to share?.

And welcome to bluelight btw. :)

Does look tasty that, missus :).

I like beany things. Beans and spices and soups are all Good Things. The combination of all three is an especially Good Thing. One day I shall acquire a cooker and cook some of your goodies, tribal. Until then I shall salivate at your pics :).

I need to get a camera first but I do a mean spicy pasta sauce. Pictures are a must though as it looks as good as it tastes.

At Spade's request...last nights din-dins...and probably tonight's and tomorrow's too at this rate. =D

SPICY BEAN & VEGETABLE PIE (SERVES 4)

pie.jpg

INGREDIENTS:

* tbsp of olive oil
* 2 garlic cloves, crushed
* 2 leeks, sliced
* 2 medium parsnips, diced
* 3 medium carrots, dices
* 3 celery sticks, sliced
* 5 mushrooms, sliced
* 400g can of mixed beans in chilli sauce
* ¼ pint passata
* ¼ pint of vegetable stock
* salt & pepper

TOPPING:

* 3 medium potatoes, diced
* 2 medium parsnips, diced
* 4 tbsp of freshly chopped chives
* knob of margarine

1) Heat the oil in a large saucepan, add the garlic and cook for 30 secs. Stir in the leeks and cook for one min. Add the parsnips, carrots and celery and cook for 2-3 mins. Add the mushrooms, mixed beans, passata and stock, season to taste and simmer for 20 mins. Transfer the mixture into an overproof dish.

2) To make the topping cook the potatoes and parsnips in a large pan of bowling water for about 15 mins or until tender. Drain, add the chopped chives and margarine and mash together. Season to taste and then spread over the spicy bean mixture. Bake in a preheated oven at 200 degrees for 25-30 mins until golden brown.

There's just so much stuff available for veggies these days (apart from vegetables, of course ;)), it makes the transition from being a meat eater really easy.

Personally, I'm not a great fan of Quorn, as it doesn't quite 'agree' with me, but I know I'm in the minority there!

Sainsbury's have got a pretty good range of stuff, including 'Lincolnshire' sausages (similar to Cauldron's, which are also good and, for my taste, better than either the Quorn or Linda McCartney ones), 'Chicken' pieces, mince, etc. they did do some 'Beef' pieces and 'Pork' style sausages a short while back but they seem to have disappeared from the freezer cabinets :(

Talking of Linda McCartney stuff, the lasagnes are really good for a quick tasty meal (and Sainsbury's often have 'her' stuff at half-price ;)), while the 'deep-filled' pies are quite a good substitute for a meat pie, though Ambledown Organic pies are my favourite in that area, being really filling and flavoursome :D

How are you finding the change, anyway, Evad?

hey fishy thanks just noticed this post! the cauldron sausages are nice, thanks for all bthe recommendations will definitely have a look.

the change is good, was part of a whole lifestyle change, quit smoking and cut down massively on drinking too feel great :D

nice one evad, glad it's going good. wanna do the same but don't have the willpower at the moment. hopefully next year will herald a bit of a lifestyle change tho

also gonna try making soup, as was inspired by wibble earlier to make some and that seems a rather nice place to start. might go for that casserole TG posted instead though it looks pretty ace

gonna do some cheese scones this weekend cos my dad likes them a lot and i feel like i really don't do enough for him so hopefully they'll go down well

or fail miserably idk i just like cooking

Just finished the last of that casserole for my lunch today. It was the bollocks. Everyone who came in the staff room was like, "mmmmmmmmm...that smells nice and spicy". It certainly cleared my sinuses. :D

Most of these recent recipes are from this book I swiped from my Mum.

lime and coconut suprise

You put the lime in the coconut, you drink 'em both together
Put the lime in the coconut, then you feel better
Put the lime in the coconut, drink 'em both up
Put the lime in the coconut, and call me in the morning

Kebab for a £1 = oh so very wrong!

Though tbf it's not even worth a quid so fuck knows. :D

Home made marzipan
This is enough to cover a 9" round cake or and 8" square cake liberally!

1lb ground almonds
8 oz icing sugar
8 oz caster sugar
1-2 tbsp sherry (something reasonable like tio pepe)
1 tsp lemon juice
5 egg yolks (use good free range eggs as the yolks won't be cooked)

Sieve icing sugar well to avoid having lumpy marzipan.

Mix dry ingredients together.

Make a well and add in the wet ingredients and mix well.

Knead and little and dust with icing sugar, don't over work it.

If you're covering a cake use warm apricot jam to make it stick.
