The Recipe Thread (EADD Version)

yeah thanks, i've enjoyed all of your recipes that i've ended up making. i had the potato and pea curry last week and it was very nice. wondering if any of the meat replacement type products (soya/tofu/fungusy shiz) is any good, just want to get a bit of variety anhd try as much as possuble so i can build up a decent catalogue of meals.

sounds pretty tasty, going to make some falafel as well at some point.
 
There's about a million things I want to get round to making and falafel is definitely one.

OK, most of the Quorn products are pretty good. I would recommend their Bramley Apple Sausages, Peppered Steaks, Mini Scotch Eggs, Lemon Pepper Fillets, Fajita Strips. Most of their other stuff is alright, but those are the stand out ones for me.

When it comes to 'mince' I go for Realeat's stuff as it has a bit more bite to it. The Quorn stuff tastes nice, but kinda disolves into mush.

Also, tofu might put you off at first if you don't prepare it right. Cauldron do some nice marinaded pieces which eliminates all that pesky preparation nonsense. :)

I find their chicken style pieces really useful for things like stirfrys etc, I also think they are really tasty.
 
AMAZING SNACK

Strawberries w/ Sour cream & Brown Sugar

Take a strawberry
Dip it into sour cream
Roll it in some brown sugar

and yum yum yum. It's So so so good. Trust me! Haven't met anyone that doesn't like it.
 
tg i've stepped over to the darkside (veggie not gay) if you have any essential recipes or tips etc i'd be very appreciative
There's just so much stuff available for veggies these days (apart from vegetables, of course ;)), it makes the transition from being a meat eater really easy.

Personally, I'm not a great fan of Quorn, as it doesn't quite 'agree' with me, but I know I'm in the minority there!

Sainsbury's have got a pretty good range of stuff, including 'Lincolnshire' sausages (similar to Cauldron's, which are also good and, for my taste, better than either the Quorn or Linda McCartney ones), 'Chicken' pieces, mince, etc. they did do some 'Beef' pieces and 'Pork' style sausages a short while back but they seem to have disappeared from the freezer cabinets :(

Talking of Linda McCartney stuff, the lasagnes are really good for a quick tasty meal (and Sainsbury's often have 'her' stuff at half-price ;)), while the 'deep-filled' pies are quite a good substitute for a meat pie, though Ambledown Organic pies are my favourite in that area, being really filling and flavoursome :D

How are you finding the change, anyway, Evad?
 
If you're going to be a veggie why eat "beef, chicken and pork' substitutes. You're not sposed to like that kinda of thing. ;) :p

I need ideas for lunch to take to work. Ideally stuff that takes little effort to make as I can't be arsed to cook anything. Cold meat sandwhiches are about all I can think of and are not appealing too much.
 
If you did a cook-in one night this week and have a freezer and microwave you can use at work why don't you do soups etc.

When having in-office days I take soup portions from the freezer and salads. I have a drawerful of things like oatcakes, chocolate, nuts n' dried fruit for snacking on.
 
Make a big wok full of egg fried rice, maybe add some meat/fish to it. Takes 10-20 minutes tops before work and can make enough for breakfast, lunch and enough for brekkie and lunch the next day
 
Aye don't fancy eating the same thing every meal for 2 days. Plus there's no chance that at 7 in the morning, 10 minutes before work I'm going to be staving over a hot wok. :D

I would do soups but I can never be arsed once I get in from work especially since I make dinner most nights for everyone. After that I'm fucking done with cooking.

Thinking of something that can be thrown together rather than involving any cooking. Not many ideas though. :\
 
PARSNIP & APPLE SOUP (serves 1-2):

INGREDIENTS:

* 1pt vegetable stock
* 3 large parsnips, chopped
* 2 medium potatoes, peeled and choppped
* 1 apple, peeled, cored and chopped
* pinch of salt
* 1 tsp hot curry powder

1) Place all the ingredients into a large saucepan, bring to the boil and simmer for 20 mins or until vegetables are tender.

2) Transfer soup into a blender and puree until you have the desired consistency. Return to the saucepan and heat through until piping hot.

Easy as. And tasty too. :)
 
I'm thinking about doing a bit of a vegetarian thing in the next few weeks before Christmas, and next year.

I'll probably end up eating some fishies though at times, i'm not striving for perfection. Some lovely recipes here are quite inspiring!

On the topic of rice... a tip I got from Delia, which is definitely appropriate for basmati especially is to cook using a frying pan. Using loads of water isn't that important at all, I don't find, in fact it can make rice too soggy. Make sure you're using at least a pinch of salt, bring to the boil and then simmer on a low heat for 8 minutes. I don't bother with rinsing before or after, so I can't comment on that, I just drain and shake, and get lovely tasting rice. Cook up with some turmuric if you want a bit more colour/flavour... :)
 
I find the lots of water and not so much rice thing works really well without making it soggy. I don't do any simmering just a full on boil for about 10mins usually.

I've got another really good recipe. In fact, this is definitely one I'll be making regularly. T'is absolutely yum. I <3 most food with a bit of a Moroccan influence. Cinnamon is just divine.

SPICED BLACK EYED PEA CASSEROLE (serve 3-4):

INGREDIENTS:

* 2 tablespoons of oil
* 400g can of black eyed peas
* 1 tsp crushed dried chilli flakes
* 1 onion, chopped
* 1 red or yellow pepper, chopped
* 1½ tbsp ground cumin
* 1 tbsp hot curry powder
* 1 tsp ground cinnamon
* 1 tsp ground turmeric
* ½ tsp ground coriander
* 1 tsp Herbes de Provence
* 2 x 400g cans of chopped tomatoes
* 4-5 garlic cloves, crushed
* 1 cinnamon stick
* 1 pint vegetable stock

1) Rinse the beans, and set aside to drain.

2) Heat the oil in a large saucepan, add the chilli and onion and sauté for 5 mins. Add the pepper and cook for 10 mins. Sprinkle over the herbs and ground spices and stir in the tomatoes. Cook for 8-10 mins and add the garlic, cinnamon stick, stock and black beans, and simmer for about an hour.

3) Discard the cinnamon stick before serving and season with black pepper.
