The Recipe Thread (EADD Version)

Cauli cheese was nice today. The cheese sauce turned out well, added some nutmeg, mustard and paprika to spice it up a bit. :)

Might make the Pistou soup tomorrow if I find time. Is there a reason for putting the pasta in last and not with the same time as the veg? Would cook at the same time and be quicker, no?
 
Butternut Squash Risotto:

570ml/1 pint vegetable or chicken stock
1 small onion, chopped
12 fresh sage leaves, chopped finely
2 tbsp olive oil
170g/6oz arborio (risotto) rice
250g/9oz pumpkin or butternut squash, diced small
50g/2oz butter
salt and freshly ground black pepper


12-16 fresh sage leaves fried quickly in 2 tbsp sunflower oil to top, finished with grated parmesean and caracked black pepper.

[1 scoop grape flavour creatine
1 scoop soya protein
1 pint milk
mix]

[1 dog bowl of wholewheat pasta
1 large measure of olive oil
1/2 jar lloyd gross-man stuffs
brown sauce
a few chillis
1 block cheese
mix]

done.

RRRice & Pea

Serves 2 (mainly as a side with something else)

200ml Coconut Milk
200ml Water
Cup of Long Grain Rice
Half an Onion
Fresh Corriander
Thyme
200g Kidney Beans
Chilli

1. Cook diced onion until translucent in a frying pan
2. Add Rice
3. Add water and coconut milk and seasoning
4. When boiling add thyme, chilli and the kidney beans
5. Turn down heat cover and simmer for 20 mins
6. Add the fresh corriander
 
Oh right, always thought rice and peas sounded a little dull.

Rice, with some beans, spices and fresh herbs sounds nice.

Mmmm fresh herbs, they make dishes so much more tasty.
 
I was just gonna bump this myself. :)

Aloo Mutter (potato & pea curry):

INGREDIENTS:

* Oil
* 1 tsp cumin seeds
* 1 tsp mustard seeds
* 1 large onion, sliced into half rings
* 2 small potatoes, peeled and cubed
* 4 tomatoes, chopped finely
* 227ml/8fl oz water
* 1 green chilli, deseeded and chopped
* 3 garlic cloves, crushed
* 1 in piece ginger, peeled and grated (or substitute with powdered ginger instead)
* ½ tsp cayenne pepper
* ½ tsp garam masala
* A liberal amount of frozen peas (a handful should be enough)
* salt and pepper
* chopped fresh coriander, to garnish (optional)

1) Put a little oil in a large saucepan and heat until hot. Add the cumin and mustard seeds. Place a lid (or a plate) on the saucepan and heat gently for about 2-3 mins, until seeds begin to jump and pop.

2) Add the remaining ingredients (apart from the peas, salt & pepper and coriander), bring to the boil and simmer for 10-15 mins until the potato starts to soften.

3) Stir in the peas, season to taste, and cook for a further 5-10 mins until the vegetables are tender, adding more water if necessary. Garnish with the coriander and serve immediately with rice, couscous, or whatever the fuck you like.

*NOTE: it doesn't look particularly exciting, but it's fookin' hot. Best to have some milk, or a sweet drink to accompany it.
 
That looks delicious but I'd put more spices in, at least a teaspoon of each. :D

I want a curry right now!
 
Seriously, I was cursing my dad for bringing me back one of those huge chillies as they have no heat to them. I didn't end up putting any in in the end. But trust me, it was still pretty hot.

I can handle it, I eat handfuls of the small birdseye and scotch bonnet chillis whole. :D

Remember bein given a chilli to eat by our Wibbles at a party once, oh god.

I had a curry for dinner in the end. Was an pre-packaged M&S Chicken Buna which was quite good considering.
