Onion Gravy

1/2 pint stock or water
1 large onion
1 tbsp oil
1 heaped tbsp of flour
1 bay leaf
Pinch of dried sage
Soy sauce
Salt/pepper

Peel and chop the onion finely. Then heat the oil in a pan, add onion, fry gently until brown. Add flour and herbs, cook for 3-4 mins on a gentle heat (don't burn). Add liquid, stirring to prevent lumps. Bring to the boil then simmer for 10 mins. Add a dash of soy sauce and a few twists of salt and pepper just before you serve. And don't forget to remove the bay leaf.


i always add meat stock, or whatever i've cooked the meat in, to my gravy.

excellent flavour.


So if you've cooked up a J of beef,
just bang in all those lovely flesh juices left from the bottom of the tinfoil.
 
Ah yes, but I'm a veggie. But yeah, in theory adding meat stock would work better in terms of flavour.
 
Making spinach soup atm.

Need:

50g butter
1 medium onion , finely chopped
2 garlic cloves , finely chopped
1 medium potato , peeled and chopped into chunks
450ml chicken or vegetable stock
600ml milk
450g fresh spinach , washed if necessary and roughly chopped
finely grated zest of half a lemon
freshly grated nutmeg , to taste
3 tbsp double cream , to serve

To make:
Melt butter in pan (use olive oil instead if you want)

Fry onion and garlic for 5 mins.

Add potato, fry for 1 minute.

Add stock simmer for 8-10 mins.

Add milk bring to simmer again.

Add HALF the spinach and lemon zest.

Cover and simmer for 15 mins.

Add soup to blender with remaining spinach.

Re-heat, season with salt, pepper and nutmeg.

Enjoy!

I've not made this before so not sure what it's going to be like, I'll let you know once it's ready. I expect it to be delicious.
 
The Spinach Soup was out of this world!

Next time I make soup I'm gonna make Spinach and Tomato soup, I don't have a recipe for it and I'm not sure it'll even be nice but it seems like it would be a good combo.

Tonight it's stuffed peppers and couscous for me.
 
Moroccan Pie

I highly recommend this recipe. I've just made it for the first time today and it was lovely. It's a bit like a shepherds pie but with a twist.

serves 4

Ingredients :

A little vegetable oil
1 large onion, finely chopped
1 pack of mince meat/Quorn mince
1 garlic clove
A few dashes of dried ginger
1 tbsp each of ground coriander, cumin and paprika.
1 tsp cinnamon
salt and pepper
3/4 pint of vegetable stock
handful of dried/fresh apricots chopped
juice of half a lemon

Topping:

6-8 waxy potatoes (e.g Maris Piper or Charlotte), unpeeled and cubed
1 garlic clove
Handful of fresh/dried coriander
2 tbsp fromage frais/splash of milk

How to:

1. Heat the oil in a saucepan and cook the onion gently for 10 mins. Add the mince and cook for 10 mins until brown.

2. Stir in the garlic, ginger and the spices and season to taste. Pour the stock over the mix, bring to the boil, cover and simmer for 10 mins. Stir in the apricots and continue simmering for 15 mins. Add the lemon juice and transfer mix into oven proof dish.

3. Meanwhile, place the potatoes in a large pan of lightly salted water, bring to the boil and simmer for 10-15 mins. Drain and mash roughly using a fork.

4. Stir in the fromage frais/milk, garlic and coriander to the potatoes. Spread the topping over the mince and bake in a preheated oven at 200 degrees/gas 6 for 30 mins until the potatoes are crisp.

Making a chicken curry tonight. It'll be very basic like.

I was hungry so I decided to throw random ingredients into a big cauldron and eat them.

It contains:

Rice
Broccoli
Carrots
Mushrooms
Onion
Grated Wensleydale cheese with some big chunks that just fell off into it and I couldn't be fucked to fish out
Sacla pasta sauce

It was pretty nutritious and tasted nice too.

This is a more tried and tested meal but with a bit of hungry and lazy variation.

It contains:

A jacket potato
A can of baked beans
A tin of tuna
Some grated Wensleydale cheese with less big bits in it than the previous night's dinner.

Carbs from the potato and beans, protein from the tuna, fat from the cheese, job's a good 'un!
 
Anyone got any good ideas for salads in terms of sauces/meat (that won't counteract the point of having a salad in the first place).

All the vinegaret sauces are shit and I'm bored of tuna. oh and the other sauces have about 20 grams of fat per tablespoon.

Spinach soup is the business.

Haven't got round to doing Spinach & Tomato yet. Haven't done a lot of cooking recently.
 
Anyone on here tried out any new recipes?

I've not made anything bar some soup earlier in the week.

I went to shops there and was lookin at the tinned soup for lunch. Baxters have a new healthy range however the healthy range has more carbs, more sugar, more salt and more fat than their normal range. The only difference is the healthy range has no additives.
 
I've never liked Baxters soup for some reason. They try to make it look all traditional but we all know it's just the same mass produced shite as all the rest.

Campbell's is horrible too, especially the tomato one. It has a very acidic taste which likens it to vomit imo.

And to answer your question, Spade: no I've not tried any new recipes recently. I've been a lazy cunt. :|
 
I don't mind it. Better than Hienz. :)

I'm not fond of tinned soup anyway but I'm going back home Sunday or Monday so not gonna bother making up some homemade stuff. Plus I'm lazy too. :|

I need to get back to proper healthy eating, I'm eating chocolate nearly every day. Twix Kingsize or Kit Kat Chunkies are jus too tempting. :)

No, but it's good if you want something quick and easy and you can't be arsed. An alternative to a bowel of Sugar Puffs anyway. ;)
 
^I've seen those in Tesco's but I don't think I've ever tried any.

I might give the gazpacho or the asparagus one a go. :)
 
All I cook at the moment is steak and chips or toad in the hole (sometimes using pork chops instead of sausages).

Might have to invest in some oven chips though, peeling spuds takes the piss
