🍳 Cooking 🍳 Share your favorite recipes 🧑‍🍳

In a cooking thread if we get one around here.
here it is!

so what i have been doing a lot lately is
- cut zucchinis in slices
- put then on the oven tray
- add a drop of garlic oil and half a tea spoon to each slice
- sprinkle with parmesan
- add a bit of mozzarella, too

now all this goes into the oven on good heat because i'm impatient.
i clean up the mess i made while preparing all that and some other stuff that needs to be done in the kitchen.
by the time i'm finished, so are the zucchinis.

disclaimer:
i don't like cooking, and i don't enjoy eating very much.
i rarely spend much money on food, but i like healthy stuff.
 
that zuchini recipe is similar to what my father makes sometimes and it's always good...

i wrote in the what are you eating thread, just putting egg on potato slices, onions, zucchini or whatever and then frying it makes some really good french fries or onion rings.. you can look up different recipes for how to coat the stuff with the egg and flower, but pretty much onion rings with just egg and flour fried in either vegetable or olive oil are really good imo.. one of my favorite things to eat..

also nutritional yeast added to macaroni and cheese recipes is really good. i have no set recipe but i've been experimenting with this.
 
Here's a little something my mum used to call sleeping piggys when I was a kid...

Boil potatoes whole with skin on.
Grill sausages.
Once cooked and soft, cut potatoes in half then scoop the potato "meat" out of the skin with a spoon and mash, mix with cheese.
Add cheesy mash back into skin with sausage and add a layer of cheese on top.
Oil the potato skins, place on a baking tray and cook until the skins are crispy and the top layer of cheese is melted.
 
Tator tots: preheat oven to 435( That is temperature I like)
Cook for a while( 10 minutes, then flip them over.
Cook until they look nice and golden brown.
Stab one with a fork. Wait 30 second then salt and taste it. If is done take them out and add salt and pepper.
If you are a redneck, use ketchup and if your normal don't.
Thank God, for you food. If not then don't blame me if you choke to death.

I want my oven and broiler to work again, this is unbearable I am completely surrounded by no tator tots!

- spill some on the tray
- try to stay long enough near the oven to not forget about the tots
- at some random point, open the oven door and decide if it's worth waiting some more.
- scoop them out
- eat then as they are.

hmm, the reckless and carefree ways of the young. At least add some salt and pepper.
 
I wasn't following a recipe but this is what I made for dinner yesterday. Call it a cassoulet I guess. This should do enough for 4-6 people but you'll want to add some potatoes or vegetables as a side.

1 large onion
1 stick celery
1/3 yellow pepper
1/3 green pepper
100g woodland mushrooms (or any mushrooms I just used these because they were on sale)
1tsp mixed herbs
1tsp dried parsley (you can use as many other herbs as you like this is just what I had on hand. Oregano and sage would both work well)
1/2 tspn cracked black pepper
6 cloves garlic
500g Passata
1 tin red kidney beans
1 tin black beans
100g smoked tofu
250ml vegetable stock
2tbsp soy sauce
1tsp marmite
1tbsp tomato puree
12 vegetarian sausages

  • Chop the veg and saute, onions in the pan first, then the celery, then the peppers, then the mushrooms, each a couple of minutes apart.
  • Add the herbs garlic and pepper, give it a stir and let it all sweat for 5 minutes or so.
  • Add the passata, stock and soy sauce and bring the sauce to a low simmer.
  • Finely chop the smoked tofu however you like. I did mine in little strips to resemble bacon but it doesn't really matter.
  • MIx in the marmite, tomato paste and finally the beans and simmer with the lid on for 30 minutes.
  • While the sauce is simmering cook the sausages however you like. Grill em bake em fry em doesn't matter.

Once everything's cooked just mix the sausages into the sauce at the last minute and serve with mashed potatoes or whatever you fancy. If you want to de-veganize the recipe swap the veggie sausages for regular sausages (or Toulouse if you want to go traditional) and the smoked tofu for bacon. Just make sure you cook the bacon and drain the fat off before mixing it into the sauce otherwise you'll end up with chewy bacon and a greasy sauce.

I made these paleo chocolate truffles this afternoon by throwing a couple of handfulls of mixed nuts with 4 dates and 2 teaspoons of raw cacao powder into the food processor.



I think we'd already eaten 4 by the time I took the picture.

Edit: It looks like my stomach is sticking out in this picture. It's not my hoody is just poofy.

Forgot to take a picture but I made a really nice spicy salad this morning.

I sliced a few baby plum tomatoes in half along with some red onion cucumber celery red pepper sliced olive and some torn lettuce in a bowl

AND THEN I poured a mix of olive oil chilli oil soy sauce and apple cider vinegar over the top and mixed it all in with some fresh coriander (cilantro to you colonial types).

AND THEN I popped it all in the oven in the bowl for like 3 minutes at 100C just to warm it through a bit.

Topped it with some fried tofu. Delish.

This looks very good.
And it's not just the plate.
 
It came out pretty good!


My avocados were kind of small and the dish a bit too big which is why it looks a bit flat. I'd run out of dates so I substituted dried mixed berrys and flavoured the ganache with vanilla instead of peppermint but otherwise it was exactly to the recipe.

Those dishes are amazing. :)

You could probably sell those little torte slices at the barista, or coffee shops
on the side and start a business.

However you seem very professional in your abilities. You seem very gifted at
making those recipes.

.... Do you have company stopping over for a share as well though ?? Lol.

One bite and it would be like .... Okay ' bed and breakfast ' lololol. Very Nice.
