Restaurant industry

Im definitly not experieinced enough just from school to be a Sous chef

It's that sort of mentality that will see you as a line cook at Applebee's in 2 years, having forgotten half the things you learned in school, and will give reputable employers yet another reason to throw your resume in the trash.

If you've graduated culinary school, take a job that lines up with your education. People are giving you solid advice, I don't see why you're arguing.
 
Just being realistic. School doesnt teach you everything you need if you had no experience in cooking before starting school

That is true to some degree schooling gives you the foundation to adapt and learn on the fly. No one is great at their job from day one all profesions have a learning curve. Why do you think experience is so sought after? On the other hand if you are good enough to play in the NBa would you join the globetrotters?
 
just got Fired from my Pantry position at casino in a.c. i thought i did well but our Chef was such a jerk he fired me
 
He was probably some schlub with a HS diploma that saw you as a threat because you were overqualified.

It's not a lot different at all... the time pressure doesn't change anything.

Most chefs learn from culinary school, because what the hell are you going to learn in a restaurant? Most restaurants, especially ones that will hire people who don't have training and experience, have very simple, boring menus that you can't learn much from while preparing.

Damn yo , did you ever worked in restaurants ? Cuz you learn a hell of a whole lot. And there IS a difference! Seriously, havin the pressure on and havin a bunch of orders to make is way differnet than dickin around in a class! If you can do that it dont mean you can cook fast and stay on top of shit while still doing a GOOD job and keepin up the standards for how to prep and present the food, come on it aint the same at all. I never went to no school and i learned a damn lot from the places ive worked at but it wasnt no chain shit so maybe thats why....
 
no difference between cooking in class or in a restaurant, besides time sensitivity. If you can cook you can cook. You're never gonna learn ANYTHING working in a restaurant

Its a lot different when you have 3 hours in a class to make one dish than when you do hundreds of covers in a restaurant in a few hours ! And i think most chefs learn from working in a restaurant , not from school , they just do the school to get a degree

That's interesting...perhaps things work differently in american kitchens. Here in Canada, there is no way that someone fresh out of school can start as sous chef. They would not be able to handle the loads, stress and responsibility since culinary school is 200000 times different than the fast pace working in a restaurant. You have to work your way up. Sure you won't be doing prep, but you'll probably start off as head of garde manger or entremetier and work your way up with lots of hours (off the clock preparation) and team spirit.

I would suggest that you try to get into a sweetspot, work in a bakery or do breakfast service. Round out your resume and show that you can work all angles of food service. :)

you behind the times. Everybody on here got their shit-talkin out of their system sometime around 2004 when I first came on here. so you aint in no way original, funny, or anywhere close to even bein the 100th person to make some lame ass joke nevermind the first.

Since your efforts at bein funny are miserable , you prolly would be better off devoting your posts on this site to somethin useful that adds to the site, like....Iunno.......Actualy replying to the topic instead of makin childish-ass posts that make you look like a ignorant redneck who never came across somebody different from them before?? you could try it, shit might work for you yo. Anyways, just for the record in my post talkin about whether or not you learn shit in a restaurant n all that--There is a huge difference from a class to a actual job. At school you dont know the feeling of a dinner rush where you get SLAMMED and shits flyin left and right, the waiters are up your fuckin ass cuz they didnt put their tickets in right and now they want the sides for their order made yesterday, everybody yellin at each other and everything is just hectic as all hell....You learn how to be balanced, calm, keep your shit together, work at a good pace while not makin mistakes--Pretty much , you learn how to work well under pressure. THAT aint somethin you learn in school. Theres plenty of shit youll learn, but thats a major thing right there.

You might NOT learn shit workin in a mcdonalds, but i wouldnt know,cuz i never worked in no fast food jobs before, they all been restaurant/cafe places (And that aint even that classy shit, its just a regular type of casual place and i still learned sooo much doin that kind of kitchen work)....I think i got my point down tho, but just sayin.
