I've recently been altering my diet. Trying to be more healthy I guess. I've heard beans and rice are good together, and they are, but I'm just wondering what people put with it, like sauce wise?

I put tomato sauce with it lol. I don't think it was very good. Not bad, but not good.

I don't use sauces very often, but here are some of the things I typically put on beans and rice: Sesame terriyaki sauce, soy sauce, black pepper, red pepper, broth/bouillon, nutritional yeast ("nooch"), ...

Load up your rice with stir-fried veggies, like peppers, onions, garlic, tomatoes, celery, carrots, etc. The "holy trinity'' of cooking is always celery, onions and carrots.

Then you can add spices. Go cajun one day, mexican the next, herbal... etc etc Parsley is always good. You can also do it italian style with tomato sauce.

I love cajun red beans and rice. Also mexican pinto beans and rice. Those I slap on some cheddar cheese to melt. To me, pinto beans have a nice flavor and creamy consistency that other beans often do not have. Black beans are also tasty to have Cuban style.

For chinese rice, I use all sorts of veg. You can just about throw anything in there. For a thai inspired taste, I use fresh chopped tomatoes just before serving, along with a squeeze of lemon.

i fucking love rice so this! adding a dash of a simple sauce such as worcestershire (there are different kinds honey do wonders in the flavour department.

i don't really eat beans apart from tinned baked beans so have no suggestion there. but i do love me some taco beans and the ingredients to make up the flavour - spicy stuff.

soy sauce, salt, pepper, garlic (mrs dash), hot sauce, teriyaki, sesame seeds, any kind of vegetables diced up and cooked, eggs (crack an egg in some freshly cooked rice, and mix thoroughly, the heat will cook it, and it be just a scrambled egg in your rice), any kind of meat

get creative, man.

Beans, Rice, salsa, corn, onions, cheese, avocado, and sour cream. one of my favorite meals right there.

Or you could do a bowl of beans, rice, and chili.

soak the beans over night with Jerk Sauce and Worcestershire.
________

or use Black and White Beans
heat the beans in a Veggie or Chicken Broth

boil down some Kale or Escarole*

mix in the escarole or kale with the beans
+ Rosemary and Thyme

some Jasmine or nice Long Grain Wild Rice could be added, you could probably put some Chardonnay and Parmesan in there too.
;)

______
simmer whole Garlic Cloves on as low as reasonable heat in Olive Oil for several hours, until the cloves expand and change to a soft texture, then add those with diced tomatoes.

I would go with mexican-inspired tastes like euphoria said, also coriander leaf, Tabasco, sweet peppers.

I would avoid wet sauces, beans and rice should be dry (I think).

Apart from that, I would suggest also trying Moudardara, great if you like caramelised onions.

With rice - soy sauce!!! Seriously - soooo good! Add a bit of pepper, garlic powder, and onion powder (or onions). Although I don't eat eggs anymore, putting scrambled eggs with fried rice is soo good. I also love adding carrots and beans and frying it (in the soy sauce). Yummm!

As for beans, it depends on the beans. I love chickpeas. Mixing them in lemon juice and some spices (a bit of cayenne and then salt, pepper, garlic powder, onion powder) and baking them! Delicious!

Have you tried tofu? It is so good - delicious and filling. Soaking overnight (sometimes for two nights) in soy sauce and spices of your choice (make sure you choose the firm kind) and then baking it.

Rice, beans, and tofu are main staples in my diet (besides veggies and fruits, lol).

I wouldn't put tomatos with it, unless they're well cooked and got a pinch of brown sugar with dem + add drizzle o' lemon juice to counteract their extreme acidity(funnily enough lemons alkalize when digested).

Rice + beans or rice + chickpeas or rice + lentils - be very careful about not eating them TOO often - you will get the shits, and also add a pinch of asafoetida or 2 which will help counteract the trapped/escaping wind. ;)

General spices and veg should be added. I usually fry onions in ghee/sunflower oil then add teh spices, then add teh beans and the hefty veg, then add the rice, then when that's starting to sizzle I add the water just above the lot and bring to boil, before simmering until it draws up most of the water. Leave it for 5-10 minutes, after adding a nob of peppered butter/ghee on top (black pepper + ghee or butter = aphrodisiac, circulatory booster and digestive), before tucking in! YUM.

Rice and beans is the basic food for large portions of the world.
There are countless ways to make them taste wonderful.
I often use soy sauce, toasted sesame oil, and rice vinegar as a dressing, and you can put this on a bed of greens on top of rice and beans and get a simple but complete meal. Add avocado, cucumber, tomato, lightly steamed broccoli, grated ginger, and nori and make it a feast.
Or put nuts and curry powder.
Or chipotle pepper and corn and onions.

my bean recipe.

1 pound baking beans ( yellow eye, pea, great northern or whatever kind) rinsed and soaked overnight.
1 small peeled onion whole
2 tbls ketchup
2 tsps dry mustard powder
a dash of ground ginger
1 tsp black pepper
1/4 cup molasses
2 tbls brown sugar
3 thin slices of salt pork (could use a pork chop or 2 but you'll need to add a little salt)
cover with hot water in a bean pot or dutch oven and bake for an hour at 350 F for an hour turm heat to 300 F and cook for another 5 or 6 hours adding more water as required.

For white rice i add a bullion cube or two.

I really like jasmine rice. Tastes a little like popcorn.

I also really like wild rice mixes.

My new favorite is "black japonica" it's purple and very sweet and nutty flavored.
