Cooking with oils

Extra virgin olive oil is the best oil to saute in for most types of cuisine, for taste alone. You can't make Italian, Greek, Lebanese, Israeli, etc. or much Mexican food without olive oil. I'm not sure why everyone worries about EVOO's smoke point - why would you cook at such high temperatures? There's no need with a frying pan or skillet and vegetables in olive oil.
