Anyone else gluten free? - Mega Merged

I'm gluten sensitive and avoiding the stuff in all forms. I'm also a vegetarian so I have a pretty different diet! :) I was wondering if there were any other gluten free bluelighters out there, maybe we could share tips or products or something.
 
I have no idea if I have an intolerance to gluten, but I'm cutting it out of my diet now - or at least cutting down considerably - for a trial period to see if it'll clear up some health problems (mainly fatigue and bloating).

The only thing I miss is bread, but I found some really delicious gluten-free rye bread. I'll also miss my couscous but I've started eating quinoa instead.

Don't have any tips as I'm fairly new at all this but I'd love to get some recipes!
 
After getting fairly sick the last time I ate seitan (gluten as a protein source), I've been avoiding it. I still eat bread and pasta, but MUCH less of it, and seem fine. Honestly, I'd have no problem switching to other grain pastas and what not, but I would have a very hard time giving up my occasional dark German rye bread. Yummmm, especially toasted with a bit of marmite and a sharp cheddar and topped with fresh pea greens.

Oh, GB-- quinoa is the bee's knees. Not only is it a tasty grain, but it has TONS of easily-digested complete protein. Depending on who you ask, more (pound-per-pound) than any meat source. I saw a quinoa pasta the other day in the organic grocery store, I should check it out.
 
I'm not completely gluten free, but I think I may have a mild allergy so I try to avoid it as much as possible. I don't buy anything with it, and only eat it as part of tortilla's when I go out for a burrito.

I'd also suggest Quinoa, it's really tasty and good for you, pretty versatile too. You can even get quinoa flour to make pancakes and other non-expected food. I'm also a vegan, so if you want any specific recipe suggestions or anything for you're gluten-free/veggie diet, let me know!
 
I love quinoa. Its a godsend for gluten free vegetarians as its a complete protien and gluten free all in one.

I like to make quinoa, and top it with olives, garlic, tomato/spaghetti/pizza sauce (just be careful, some sauce mixes aren't gluten free), and mozzerella(sp?) cheese. Gluten free pizza bowls! I like jalapenos in them sometimes too. :)

I have quinoa pasta and honestly I like it more than ANY wheat pasta I ever ate.
But a word of caution, the kind I have is made of a mix of quinoa and corn flour, and I know a lot of celiacs are also allergic to corn.

Ive been at this a long time and Im STILL getting glutened. There was so much I didn't realize had gluten in it. :( Most commerical ranch dressing mixes at restaurants have it. I found that out today and was bummed because salad is one of the only options I had left for eating out and I dont like salad without ranch. Even the italian dressings at my work have gluten.

Good news: The SUNBIRD brand stir fry sauces I LOVE are gluten free, I was avoiding looking into it because I was scared of what I might find out (dumb I know lol) but luckily the news was good. Most of the sauces are vegan and gluten free, but you have to use a gluten free soy sauce to make them. Being vegetarian I love stir fry.

I also found out today LAYS STAXX chips are gluten free, the entire line. Not only are they themselves gluten free but they are free of cross contamination issues, unlike the rest of the LAYS brand, which are made on the same lines as the gluten stuff.
 
Yeah, a friend of mine is severely celiac, and the list of stuff that she can't eat is huge. Pretty much any prepared food will have some sort of gluten/wheat product in it. Luckily she's an amazing cook, and pretty much just never eats processed food, or out.

Now I really want to try the quinoa pasta. Any particular brand that you like?

I'm really pissed off right now because I can no longer have chickpeas either. Seems my gluten intolerance has led to some other food sensitivities as well. I was in denial about the chickpea thing for some time, but it cant be ignored now, I've gotten sick way too many times (pretty much every time) now. Ive tried two different brands of canned chickpeas, and a brand of storebought hummus. I don't really see how cross contamination could happen with chickpeas, at least not all those times with different brands.

I'm really sad, because chickpeas are vegetarian staple food. :(

Noooooo! I couldn't live without chickpeas. My heart goes out to you.

Although, I have had hummus-like spreads/dips using other beans. Soaked broad beans or fava beans work fairly well, or if you like a pastier texture black beans are pretty good. But it's not quite the same.
 
I'm going to try making some. I have no idea what the heck it is about chickpeas.
Whenever I eat them, I immediately feel exhausted.
Then follows stomach pain, bloating, sometimes nausea, and a general feeling of "ick" sometimes even depressed thoughts which isn't like me.
The same thing happens with gluten, the depressed thoughts. With gluten I get more outbreaks on my skin though.

The good news is my body loves black beans, and there are soooo many tasty things you can do with them!
 
That is odd. Too much gluten for me just beats the heck out of my stomach, and causes some symptoms that aren't fit to discuss in polite society ;) But never depression. Even the breakouts are odd, I'd guess that that would be a carb issue, rather than a protein sensitivity. But, you know you best :)

Black beans rule, but they tend to get more gluey when they're made into hummus. I don't mind it myself, but those who are more finicky with textures might be.
 
A lot of people get skin issues from gluten. DH is a common one.
I hear that because of the situation of constant inflamation and leaky gut it causes, the toxins leak into the rest of the body and can cause a variety of problems. I never knew that til I started getting into it and joined a celiac message board. A lot of people have a hard time dealing with the behavioral problems in their children that result from gluten exposure.

The hardest thing for me is I work around it. I'm so scared of getting "infected".
 
I made a good gluten free vegan dish tonight..
a stir fry with coconut oil, broccoli, bamboo shoots, baby corn, garlic and a spicy soy sauce, over a bed of quinoa! It was yummy!
 
my ma is wheat-free and i'm a vegan, so i have a couple of great recipes if anyone cares for them (including an awesome choc chip cookie one i just discovered :D )

it's all gluten-, dairy-, egg-, wheat-, yeast-, GMO-free with no risk of cross-contamination. the all-purpose flour and egg-like are perfect for baking ;)

also, regarding your reaction to chickpeas...

i was just interested in whether it's just self-diagnosed at this point? like, if you bought dried (and maybe also organic) chickpeas and soaked them yourself could this help? and is it just chickpeas/hommus, or all chickpea products including besan flour and falafels and stuff?

I am gluten free, and on an all raw diet.

So far I am loving it. It seems to improve my skin, almost eliminating acne, and
I feel better than before.

My biggest problem is how expensive avocado, raw eggyolks and sashimi is!
Also, it is sometimes hard to consume enough energy, but I think I will manage :)
