I have pretty severe nerve pain in my foot that started two weeks ago. And I mean this pain is excruciating.

To start me off my doctor prescribed a NSAID, Celebrex, which does little-to-nothing.

But, today, for my own (school) reasons, I took one 20mg Adderall XR and two 5mg Dexedrine and my foot feels back to normal?

How the hell? Is this normal? I'm mind blown.

Yes, amphetamines, and other stimulants can cause analgesia (pain relief) because of the release of dopamine, norepinephrine, and serotonin. I would assume there would be some analgesia from taking the amphetamines you did, but I wouldn't expect complete analgesia, but it is nerve pain, and that is tricky. I would advise not to use amphetamines daily for any continuous amount of time regardless of why you might be taking them, so the same would apply for taking them for pain. I don't see the issue with taking them for especially bad flare-ups or just for a little while if they seem to work so well for you. Look into Neurontin (gabapentin) or Lyrica (pregabalin). Both could be of help with nerve pain, but gabapentin seems to have a more forgiving side-effect profile.

Amphetamines are not a long term solution. As mentioned above, Gabapentin and Pregabalin are often times prescribed for nerve pain (such as neuropathy). Tramadol is often prescribed for nerve pain as well. And depending on the severity and cause of the pain, your doctor may start you on something like hydrocodone.

There are other drugs, such as Celebrex, Elavil (an older antidepressant) that have been found to be effective in treating nerve pain.

They have been effective but unfortunately cause muscle cramps in high doses for me due to magnesium and potassium depletion (despite supplements). I think this is also due to the diuretic effects and just generally over working the body. None the less I think that all pain management patients should get a low dose vyvanse or adderall xr as they would be beneficial drugs for anyone with chronic pain.
