Shake 'n' bake meth logic?

Okay so I'm NOT asking for a recipe or ingredients but rather what happens to the ephedrine after the chemical reaction starts inside the bottle? I have seen some people i know use the sake 'n bake method for making meth but none of them really knows what's happening. All they know is, you add so much of this and that and when its done you filter it, smoke it and bob's your uncle.

The ephedrine is reduced by a reducing agent (a substance that donates electrons) to methamphetamine. The beta hydroxy substituent is replaced with a hydrogen.

Changing the law to use something like Zephrex-D would end homebake and it would all be Mexican... and isn't the US building a 'peace wall' or something so NO WAY could Mexican meth reach the US.
