Most of the important neurons are on the outer "surface" of the brain, the foldy, squiggly part. So it doesn't surprise me that people can adapt to lage portions of gray matter missing, if they survive infancy.
 
Reminds me of the boy born with no brain, although in his case it appears to be re-growing.

The brain's plasticity is certainly impressive, which makes you realise just how depleted dementia sufferer's brains must be, and how damaged it must become before symptoms are noticeable - something for those using neurotoxic drugs to worry about.
