i have this idea of cooking something sweet like a plum, not just to add flavor to something else, but to make the plum soft, sweet, spicy, and delicious. i am also curious about other fruit, such as mango and even grapefruit, and how to use them.

any suggestions about things to watch out for, such as seeds being too bitter in some fruits once they get hot, etc, or any ideas at all are welcome.
 
Pineapple and watermelon grill well.

I like carmellized onions and carmelized granny smith apples on my grilled cheese.

Cooking berries produces a tasty goo.
 
For apples you can Fry them, grill them, roast them… it’s not really rocket science. What do you want to know specifically? Do you want to know which fruits can be cooked well? Which cooking medium is best for each?

You shouldn't really be leaving seeds in any fruit you are cooking unless it's a berry.

bake em in butter and brown sugar. add some cinnamon afterwards.

Guavas can be cooked as well. In fact, look for a recipe for guayabate. It's pretty good. If you don't wanna do all that work you could just peel em and cook em with sugar. Removing the seeds isn't necessary but it's suggested.

i want to hear about how to make them juicy but still kind of hard. they do taste good soft, but i want them to fight back when i'm trying to eat them a little bit.

You have to grill them or sear them at high heat then, make sure they aren't sliced too thin. Apples breakdown and get mushy pretty quick.
 
do you slice the bananas down the middle, open face, put the cheese on, and then use the bacon to tie it back together when it's done?
 
Cook bananas after brushing with butter for 7-9 minutes. Remove from oven, slice down the middle, fill with cheese, then use bacon to tie it back together, cook until bacon is done. I usually do 350, then finish it off by topping it with a bit more cheese and using the broiler to give the cheese that perfect crisp.

Tonight I am having pineapple with pork, bell peppers, and whole roasted garlic.
 
bananas foster on ice cream is good too..

Was gonna say peaches on the grill but animal cookie beat me to it.
 
man, i am getting some ideas from this thread.

check it:

i moved to an area known as Little Mexico in the city, across the street from the best supermarket on planet earth. Street vendors inside and outside the store, just like Mexico City. And the best fruit, seafood, meat, veggies. i've started cooking with all the different peppers, and now i have a huge stock of fruit in my fridge. they had ladies inside making fresh cactus juice with pineapple today.
 
tostones are pretty killer imo too.
Twice fried plantains sprinkled with salt... Sounds weird but is really good.
 
Grilled. Avocado.

Seriously. A quick sear to get nice hash marks, then a squirt of lemon, a sprinkle of coarse salt and a spoonful of salsa in the pit hole. Heaven.
 
^I havent tried that but I've been dying to, I never thought of cooking avocado until I saw the idea recently and it intrigued me.

Grilling or broiling citrus is supposed to be good too, grapefruit in particular, its supposed to really bring out the sweetness. You do have to be careful about cooking citrus though because if you do it too long it can become bitter, so just enough to bring out some grill marks or just a couple minutes under the broiler (if even that long, I havent actually tried it yet).

Also a warning about the pineapple, cooking it separately and then eating it with something else is fine but you do have to be careful about cooking pineapple with meat because the pineapple can break down the meat and make it almost soggy feeling, so just be sure to cook them separately and then only put them together right before you eat them.
 
I sear the meat really well and only use pork with pineapple. But still, I recommend cooking in such a way that the meat does not stand in pineapple juice.
