what cake can a mediocre baker make for a diabetic for a big birthday?

as the title says.

i have like one of those big tins. no sandwich tins. a loaf tin but i really don't think a loaf cake is appropriate for my mum's 70th birthday. i'll probably go shopping to get the ingredients (though if its literally only flour and sugar that would be a big help) so i might be able to get a new tin if they sell it in lidl, the cornershop, or tesco local (i don't think they sell cake tins)

also it will likely be made on weds/thurs and eaten on a sunday so it needs to keep.

i'm much more bothered about looking like i've put in effort than it actually being effort. love my mum and all but i've already put a good 10 minutes into chatting with my sister about what present she should go and buy from us.

i am a competent baker but not bakeoff material.
 
but i can't cope with banana in things!! it took a long time to be able to even cope with banana on its own.

damn. annoying thing is she would probably like that and i do need to put her first here. she really likes fruity cakes. the orange angel cake also looks amazing. thank you! i'll take a look at their methods and ingredients list and see if i feel up to it.
