First, mods, if there is already a similar topic feel free to merge this. I browsed a few pages but I didn't see a topic like this, however I am kind of stoned and tired so I may have missed it.
Anyway, let's start sharing recipes of easy/fun stuff to cook when stoned. I, personally, am a big fan of breakfast food so I will start of with my specialty, omelets!
What you will need:
3 eggs per omelet
shredded [preferably freshly shredded] cheese of your choice, I usually go with a sharp cheddar
green and/or red bell peppers [I usually use about 2tbsp, but you can eyeball it or use more if you like]
thin cut honey roast ham
basil
butter
12"-14" nonstick skillet, preferably with a shallow rim for easier lifting
thinnest spatula you have, preferably a flexible silicon one
Cooking instructions:
I always prepare everything on the counter so it's ready to go as soon as the eggs are starting to set, since the hardest part of cooking with eggs is timing. First thing you should to is heat the pan to medium high. When it's hot, wipe it down with just a little bit of butter to help out the Teflon and add some flavor. I always have my eggs cracked and scrambled in a bowl with a little bit of salt and pepper and the basil at this point. Pour the eggs in, swirl for about 10 seconds to build up a few base curds. Next, put on your fillings. I usually only cover about half of the egg with stuff so that it will stick better when I fold it over, and I usually put the cheese on last to help stuff stick. If you can't do the fancy French trifold, just fold the whole thing over in half on itself. Remember, you're high, presentation doesn't really matter. Make sure you pull it while the center is still a little on the liquid side. Eggs keep cooking after you pull them, so if it's done in the pan it's overdone on the plate.
A few things to remember:
Eggs cook very quickly and so temperature control can make all the difference between a good omelet and a great one. I usually warm my eggs up to room temperature before cracking them by running them under warm water until they don't feel cold. I also microwave all of my fillings [except for cheese] for a few seconds so they're not refrigerator cold when they go into the pan.
I like this recipe because it's easy, takes about 5 minutes from prep to plating, and because you can substitute any fillings in based on what you have. Perfect late night stoner snack, and not terrible for you either.
