I've been putting down Quickbooks on my resume, and tbh I've only touched it once (counting the box that the software comes in, at the store).

How easy is it?

quickbooks is very easy to use but, like any application, it requires some knowledge of the background concept and some specific knowledge.

what are you going to do if somebody sits you down at a pc and says 'create a new set of blank accounts for a company we're now doing business with ' and you can't find a menu item called 'create a new set of blank accounts' (because the option has a different name)?

if you have access to the software, why not just sit down for an hour or two one day and get down the basics?

Not really lying, just preemptively assuming future skills. Causality isn't violated, just stretched to fit accelerated local time.
 
It's the easiest accounting program to use. You could always purchase the quickbooks for dummies book which will give you all the information that you need.
