Just as the title says. I'm wanting to preserve some Pedro tea using the water bath (high acid) method.
So, if I'm using a tablespoon or two of vinegar while I'm making and boiling down the tea, does that boil off and change the acidity?
How much lemon juice or other acid would I add to the jars before the water bath before I can to ensure the acidity would be good? It's only a tablespoon or two for tomatoes, but they are already pretty acidic.
Anyone ever done this?
