Opioids Growing Opium Poppies, when will stalks shoot up?

I planted Tasmanian Purples at the beginning of this past Summer and they never got more than sproutlings. The summer heat here in Cali must've killed them. But low and behold they started to grow at the beginning of
December, and at an exponential rate as well. They appear to be in the lettuce stage with the leaves getting bigger every 4 days or so it seems.

My question is, how long will they be in this lettuce stage before the stalks come up? And am I doing them right by generously watering them twice a week? I want them to grow to the best of their ability :)

I'm also hoping that once these turn into pods that the seeds will germinate again come this spring and I'll have another batch.

Thanks for any info/help. :D
 
I watered mine every day... twice a week doesn't sound like nearly enough, particularly in Cali summer.

Except its winter now.
The way I did it was to push my finger into the soil until the second knuckle near the plant.
If it felt damp or wet then I didnt water, if it was dry then id water them. Its that simple.lol
Its take around 8 weeks of veg growth before it flowers but im not 100% on how long it will take in your climate.
The real skill is knowing the right time to harvest, unless your harvesting knowhow is pretty good already, id get swotted up.
