Help me make Fish & Chips

I'm having a hard time figuring out the difference between chips and french fries.

Fries are too crispy and the insides are barely noticeable.

Chips are slightly crispy on the very edges, and lovely and fluffy (soft as mashed-potato) on the inside.

You'll burn you mouth on the moist insides if ya aint careful, they hold heat for a while.

Parboil vs Double Fry Debate <3

Parboil slighty making sure the chips maintain their integrity then double fry, the second fry should be done at the highest temp just after you have cooked the fish. The essence of this dish is that the fish and chips are steamed rather than fried. Orignally the batter was thrown away after cooking but I suppose improvements in cooking gear and the cooking medium made the batter edible as time went on. You can add a little beef dripping to your oil to improve the chips but some dislike the fish being cooked in this medium, I like use goose fat in my chip oil or better agin chicken fat if it can be got. Chips cooked entirely in goose fat are delicous and extremely economical, one serving and you won't want to eat anything else for a while, but I recommend you try them in the Dordonge rather than at home because of the impracticalities involved in home prep.

I'm off to the chippy in a bit, no fish in our fridge freezer yet this year, finished all last years now :(

i'll go for large hake, me missis a large cod, and the boy a normal cod...we just get one "large" portion of chips between us as there are just fucking loads.....

tin of mushies and tin of processed peas sat on the hob at home.....


AND, JSfuckingPete, BALSAMIC VINEGAR.....your sort shouldn't be allowed near a traditional chippy, ffs :?
 
I like. ground white pepper as a condiment on my chips, malt vinegar and cheap salt on everything. I think mushy peas & tartar sauce spoil the purity. McDonaghs on quay st in galway get my vote for best fish and chips, they deal in wet fish and the shop is right beside the docks in galway. Lovely delicate crisp batter and contrasting with the fish sweet and white to the point of translucence falling apart witinin yet still retaining texture. The chips are meh in comparison.

Ahhh, that's what ya need, our village has an alright fish and chip shop, but a nearby town, a couple of nearby towns actually have wet fish shops with chipies attached, you can buy your fish from the wet fish shop and they'll batter it and do your chips for you while you wait....lovely....

The freshness of the fish is paramount, you know this as an angler. I used to do a bit of salmon brown and white trout fishing, I still remember the eating of freshly caught seatrout years after, grilled with salt black pepper and butter and eaten on their own with salad leaves to follow, the pale red flesh just slighty charred. Our ones rarely ran past 2lb but they were my favourite fish to catch.

sea trout are amazing fish <3, I've never had one over 2lb, but there are some big buggers caught in our river every season, double figure fish... 8)

I love eating little brownies too, so much better than farmed trout, and they <3 a fat juicy worm to eat

Smoking a cigarette and fishing a worm for trout in a placid stream when I was 12 or so, what a glow, we had a the end of the Tom Sawyers pastoral, just before central heating.
 
I've got my dried peas soaking in water overnight, with a bit of bicarbonate of soda in there.

What is the best way to cook them? The basic way that I am seeing is to drain after soaking, then cook in a saucepan after covering them with water, simmer until mushy, and add salt & pepper. Should anything else be added to the peas?
 
Hmm, never attempted to make them, only ever bought them from a chippy.. lashings of salt I'd imagine. Just googled it, Jamie Oliver says lemon juice and mint and all sorts but then he always says stuff like that! Bicarb, salt and pepper seems to be the consensus among the "traditional mushy peas" recipes..

Expect them to look disgusting :D I'm looking forward to pictures of your endeavor, Tommyboy!

You're right on track with the mushy peas - getting the mush factor right is much to taste, keep some lumps! :) and I like extra vinegar on mine.
 
I'm in the middle of cooking it now. Pics will come later on. Btw, cod is $15/lb by me, and I bought 3 lbs so it's a rather expensive meal so far.

My sister in law worked at the award winning "BEST FISH & CHIP SHOP IN BRITAIN" btw...so I can source the recipe for special sauce ;) true story 8)
